Air Fryer Breakfast Potatoes with honey and bacon. Crispy edges, fluffy within and the ideal balance of sweet and salty – a perfect side dish!

Honey bacon and… potatoes? I know the combo might sound a bit out there but trust me when I say that these honey bacon roasted potatoes will rock your world, whether you eat them with breakfast, brunch or as a side dish to your fave meals.

What are breakfast potatoes?

Breakfast potatoes are simply potatoes that are cubed, parboiled and then fried. This breakfast dish is all over diner menus in the US and Canada where it is also known as “home fries”. My breakfast-loving Canadian husband introduced them to me when we first started going out and I have loved them ever since. 

This honey bacon roasted variation is sure to become a favorite with your family as well – they certainly disappear in a hurry whenever I make a batch. And they certainly need not be limited to breakfast or brunch – they are just as delicious served with steak or a roast dinner!

What You’ll Need

We can skip the parboiling since we are making this recipe in the air fryer (hooray, one less step!).

  • Potatoes: Russet potatoes (also known as Russet Burbank or Idaho potatoes) are the ideal choice for this recipe, but any high starch potato variety will work well. In the UK you can use Rooster, Maris Piper or Butter Gold potatoes.
  • Olive oil: to crisp up our potatoes – you can use a spray bottle if you want to control the amount of oil if you like.
  • Bacon: thick cut smoked bacon.
  • Garlic: minced garlic is added towards the end of cooking for added flavor.
  • Honey: good quality natural honey with no additives.
  • Salt and Italian Seasoning.
  • Parsley or chives to garnish.

How to make Air Fryer Breakfast Potatoes

  1. Place the strips of bacon in the air fryer basket, spaced slightly apart. Air fry at 400°F / 200°C for 5-6 minutes or until the bacon is crisp. Use tongs to transfer the bacon onto a paper towel and allow it to cool down. Cut into small cubes and set aside.

  1. Give the potatoes a good rinse, pat dry then cut into small, evenly-sized cubes. I don’t peel the potatoes but you can do that if preferred (there’s lots of nutrients in potato skin if you need an excuse to be lazy).

  1. Add the potatoes to the air fryer basket (without cleaning it first as we want the bacon fat released during cooking, it adds so much yumminess). Drizzle with the olive oil and sprinkle with the salt and Italian seasoning. 
  2. Toss everything together and air fry at 400°F / 200°C for 15 minutes, shaking the basket vigorously once or twice. The potatoes should be pretty tender if pierced with a knife at this point.

  1. Drizzle the honey over the potatoes, add the minced garlic and bacon and toss to combine. Cook for an additional 3-5 minutes, or until the potatoes are golden and crisp. Taste and adjust the seasoning if needed. Garnish with the chopped parsley and serve!

Serving Suggestions

Breakfast potatoes are not just for breakfast! They are an excellent side dish for a variety of dishes and equally at home on your holiday table.

Can I cook breakfast potatoes in the oven?

You certainly can! It takes a little longer as we need to parboil the potatoes first.

  1. Preheat the oven 400°F / 200°C. Place the bacon strips on a non-stick roasting tray and cook for 10 minutes or until crisp. Set aside on a paper towel and then chop into small pieces.
  2. Dice the potatoes and parboil with a pinch of salt for 2-3 minutes or until a bit tender but not cooked through. Drain and allow the potatoes to steam dry so they crisp up properly.
  3. Spread the potatoes on the tray you used for the bacon in a single layer. Drizzle with the oil, add the seasoning and roast for 35 minutes, mixing well halfway through.
  4. Drizzle with the honey and toss with the bacon and minced garlic. Cook for 5 more minutes or until the potatoes are cooked through.

Recipe Notes and Tips

  • Leftovers will keep for 2-3 days in an airtight container in the refrigerator. Reheat in the air fryer for 5 minutes or so before serving to crisp the potatoes up again.
  • Don’t be too heavy handed with the seasoning as the bacon will add a fair bit of saltiness to the potatoes. 
  • For a vegan variation you can replace the honey with maple syrup and leave out the bacon or swap it with a plant-based equivalent.
  • You might be tempted to add the garlic and honey at the start of air frying. Trust me you don’t want to do that as the garlic and honey can burn and turn bitter.
