Air Fryer Meatloaf is a game-changer for busy weeknights, offering the nostalgic flavors of a traditional family dinner with half the cooking time and a fraction of the mess.

Meatloaf is often called “America’s comfort food,” rooted in European traditions but perfected in home kitchens across the United States.

While traditional meatloaf can take an hour to bake in a loaf pan, the air fryer cooks the meat quickly and evenly, creating a beautiful caramelized exterior while keeping the inside incredibly moist.

Here’s What You’ll Need

Comfort food doesn’t get easier – but there’s a couple of secrets to juicy meatloaf!

  • Ground beef (mince): Use 80/20 for the best balance of flavor and juiciness. You can also use a blend of ground pork and beef or veal.
  • Bread crumbs: These help bind, absorb moisture and keep the texture soft and tender rather than dense. I love using crushed Ritz crackers instead of breadcrumbs – they definitely zhush up this homestyle recipe.
  • Egg: Acts as a binder, helping the meatloaf hold its shape as it cooks so it slices neatly without falling apart.
  • Milk or buttermilk: Adds moisture and softness to the mixture. Buttermilk is especially great if you want a slightly richer flavor and extra tenderness.
  • Garlic and herb cream cheese (Boursin): The secret ingredient for richness, moisture and a subtle savory flavor that takes the meatloaf to the next level while keeping it incredibly juicy.
  • Tomato paste: A small but powerful ingredient that intensifies the savory, umami flavor of the meat mixture.
  • Worcestershire sauce: Adds deep, savory richness and enhances the overall flavor—this is what gives meatloaf that “something extra.”
  • Spices, herbs and seasoning: Garlic powder, paprika, dry mustard, dried thyme, salt and pepper.
  • Ketchup: Adds tangy sweetness and classic meatloaf flavor. It’s used in both the mixture and the glaze for that familiar comfort food taste.
  • Barbecue sauce: Brings a smoky, slightly sweet depth to the glaze, giving the meatloaf a more modern, bold flavor.
  • Maple syrup (optional): For a touch of sweetness that balances the tangy glaze and helps it caramelize beautifully.

Notes and Tips

  • Serving suggestions: Slice and serve with mac and cheese, creamy mashed potatoes or crispy roast potatoes with a side of green beans and roasted carrots.
  • Storing and reheating: Leftovers will keep for up to four days in the fridge in an airtight container or wrapped tightly in foil. Reheat in the air fryer or a skillet with a little water or broth to keep it moist.
  • Freezing: You can freeze the whole cooked meatloaf in layers of foil or slice and flash freeze for up to three months.

Recipe Variations

  • Keto friendly: Replace the breadcrumbs with grated parmesan cheese or bacon crumbs.
  • Bacon-wrapped: Drape the meatloaf with strips of bacon or pancetta, making sure to tuck the ends underneath so they stay put.
  • Turkey loaf: Use turkey instead of beef for a lighter version – 85% lean ground turkey is the best option. Cook for 30-35 minutes or until 165°F (74°C) on a meat thermometer.

Frequently Asked Questions

Can I use foil in the air fryer?

Absolutely – but make sure it is weighed down so it don’t blow into the heating element. These little magnets work a treat for securing liners!

Why did my meatloaf fall apart?

Make sure to rest the meatloaf for at least 10 minutes so it firms up slightly before slicing. This also helps the juices redistribute so your loaf stays tender.

Can I skip the glaze?

You can – but the glaze helps keep the meatloaf moist and adds a touch of sweetness which contrasts nicely with the savory flavor. If you don’t want to use glaze, consider wrapping in bacon instead.
