HOW TO MAKE AIR FRYER ROAST BEEF
Full measurements and instructions can be found on the printable recipe card at the bottom of the page. Please take a look at the steps and video before attempting this recipe!
Take your beef joint out of the fridge and pat dry. Leave it to come to room temperature for 30 minutes. Make sure to check whether your joint fits into the air fryer. You can always slice a larger joint in half.
Preheat the air fryer (400°F /200°C) for 10 minutes. Meanwhile brush the beef all over with olive oil and season with salt and pepper plus a herb seasoning mix (see recipe below).
Use a liner in the air fryer basket (optional) and position the beef on top. Roast for 10-15 minutes. Cooking the beef at a high temperature will create a lovely crust on the exterior sealing all the lovely juices within in the same way searing the beef in a skillet before roasting in the oven.
Remove the air fryer basket and turn the beef over. Reduce the temperature to 350°F / 180°C and cook for a further 30 minutes.
Start checking the internal temperature of the beef with an instant read thermometer inserting the probe in the middle thickest part. Remember that the temperature of the joint will continue to rise slightly as it rests so factor that in.
Use the table below as a guide to cook it to your liking, adding five minutes of cooking time until your preferred temperature is reached. Rare or medium rare is preferable for this lovely cut.
Beef Roast Temperature Chart
Rare | 120-129°F | 49-54°C |
Medium Rare | 130-134°F | 55-57°C |
Medium | 135-144°F | 58-62°C |
Medium Well | 145-154°F | 63-67°C |
Well Done | 155-164°F | 68-73°C |

Thanks for making roasting easy! By the way, in the first part of the recipe and in your response to someone, you typed the roast was 1.2 kg or 2.5 oz. You mean 2.5 lbs. (pounds). 2.5 ounces would nicely feed a little mouse though! : )
Brian Cox says
what size of joint are you using for these timings?
Lucy Parissi says
Hi Brian, it should be specified in the recipe. It’s a small joint 1.2kg / 2 1/2 oz 💛
Miriam Thomson says
How long per pound do I cook topside of beef in my ninja foodi air fryer?
Lucy Parissi says
It’s best to check with a meat thermometer but 20 minutes per pound plus 20 minutes is generally the rule. However air fryers can be unpredictable depending on wattage and efficiency
Stacey says
Do you use the Roast or Air Fry setting?
Lucy Parissi says
I don’t have a roast setting – so the air frybone
Alan says
The nicest beef I’ve ever tasted cooked perfectly medium rare. Thanks for a great recipe
Eddie says
Should the “Silverise ” be silverside , not criticising just a question
Thanks for the recipe
Lucy Parissi says
Yes it should, that’s a typo!
