You guys know how much I simply adore passion fruit, right? Some of my most popular recipes are Passion Fruit Martini, Passion Fruit Jam and the infamous Pornstar Martini.
Passion fruit is at the heart of many of these tropical cocktails and the good news is that you can easily make it at home.
It can be used to add a unique exotic flavor to your cakes, desserts, smoothies or even salad dressings.
What is passion fruit syrup?
Passion fruit syrup is a simple sugar syrup flavoured with passion fruit pulp. It is sweet yet tart with a unique exotic flavor.
You can buy this syrup such as Monin or Blossoms Passionfruit Gourmet Cocktail Cordial Syrup on Amazon.
Yet homemade passion fruit syrup is by far the closest you will get to real fruit flavor without any synthetic aftertaste.
Here’s what you will need
You simply need ripe passion fruit, sugar, water and vodka to make this syrup. If you would rather not add alcohol you can skip the vodka but it helps your syrup last longer.
Passion fruit with wrinkled skin are sweeter, but since this syrup uses sugar you can use very tart passion fruit as well.
How to make passion fruit syrup

Start by making a simple syrup by gently simmering sugar and water in a saucepan. Stir until the sugar dissolves and take off the heat.
Slice the passion fruit in half and scoop out their pulp into the simple syrup. Stir and leave the syrup to cool down. The fruit pulp will steep in the syrup and turn it a gorgeous golden colour.
Strain the mixture through a fine sieve to remove the seeds and pulp. Don’t press on the pulp as it may turn your syrup cloudy.
Decant the syrup into a small bottle using a funnel and stir in the vodka if using. Let the syrup cool and store in the fridge for up to two weeks, shaking before using.
How to use your syrup
Use the syrup in place of simple syrup in any cocktail recipe that asks for passionfruit juice or liqueur. It is amazing in margaritas, caipirinhas or any summer drinks.
Use it to brush on cakes layers to add moisture and sweetness, drizzle it over a summer pavlova or pancakes, stir some into your gin and tonic – you basically can’t go wrong!

Ingredients
- 8 ripe passion fruit
- ½ cup (120ml) water
- ½ cup (100g) sugar
- 2 tbsp vodka (optional)
