Spooky season is here, and I am fully committed. Every October my kitchen turns into something between a bakery and a crime scene – red-splattered frosting, trays of meringue bones cooling in the oven and at least one cocktail that changes color in front of your eyes.
I have gathered all my favorite Halloween recipes in one place, from gory showstopper cakes to easy treats the kids can help with, plus a few pumpkin bakes for anyone who prefers their Halloween more cozy than creepy. Most of them can be made ahead, so you can enjoy the party instead of hiding in the kitchen.
The secret to a stress-free Halloween party is spreading the work over a few days. Almost everything gruesome on this list keeps well, which leaves only the fun part – assembling and splattering – for the day itself.
When
What to make
Up to a week ahead
Meringue bones and meringue ghosts – store in an airtight container at room temperature, never in the fridge
A few days ahead
Edible fake blood – keep it in the fridge until needed
The day before
Bake the cake layers and wrap them well, or fill and frost the whole cake and refrigerate
Just before serving
Add the bones, splatter the blood and shake the cocktails
Baker’s tip
Save the blood for last
Splatter the edible blood just before serving. Left to sit for hours, it softens crisp meringue and bleeds into the frosting – gruesome in all the wrong ways.
Halloween Showstopper Cakes
Every Halloween party needs a centerpiece that makes people gasp. These cakes look dramatic but every element can be made ahead, and they taste as good as they look.

Meringue Bones
Meringue bones are the easiest Halloween treat – just three ingredients, piped freehand and baked low and slow until crisp. Use them to decorate Halloween cakes or dip them into edible fake blood.
Strictly for the grown-ups, for when the trick-or-treating is done.
