Spicy Pork Noodles (Ground Pork Stir Fry)

This quick and easy ground pork stir fry is loaded with noodles, fresh vegetables, and a savory-sweet sauce. Ready in under 30 minutes — a weeknight dinner the whole family will love. Make in a wok or your air fryer!

Busy weeknights call for recipes that deliver maximum flavor with minimal effort — and these spicy pork noodles tick every box. Made with ground pork, crisp vegetables and an addicting sauce that coats the noodles perfectly, it’s a comforting dinner you can whip up in about 20 minutes. Think of it as your favorite takeout Chinese noodles, but fresher, faster, and customizable with whatever veggies you have on hand.
It’s one of my go-to dishes whenever am hangry and need food in belly fast! This recipe is sort of a riff on Sichuan Green Beans (a.ka Sichuan Dry Fried String Beans or Gan Bian Si Ji Dou) a stir fry featuring blistered green beans as the star ingredient with the ground pork being almost a garnish. I have upped the ground pork and added more veggies and noodles to turn this into one of the most satisfying pork stir fries you will ever make!

Here’s What You’ll Need
You can customize the ingredients to include whatever vegetables you like, adding them in the stir fry at different stages depending on how look they need to cook. I made this recipe in my air fryer but will also give you a wok option.
- The sauce: A balance of sweet, salty and spicy, using sambal oelek or chili garlic oil, light soy sauce, kecap manis (or dark soy sauce) and honey. You can make the sauce spicy or keep it mild – up to you!
- Ground beef – Our protein, quick to cook and budget-friendly. Use pork with about 10% fat so it caramelizes slightly as it cooks.
- Onions, garlic, and ginger – Classic aromatics that build depth of flavor.
- Onions, green beans, broccolini, mushrooms and green onions.
- Noodles – Egg noodles or ramen noodles work great but you can also use udon noodles.

How to Make Ground Pork Stir Fry
- Combine all the ingredients for the sauce in a small bowl and set aside. Cook the noodles according to pack instructions, rinse in cold water and drain. Alternatively you can use “straight to wok” noodles or fresh noodles that don’t require cooking.
- Heat some of the oil in a large skillet or wok over high heat until it is smoking. Add the green beans and broccolini in a single layer and cook for 2-3 minutes, tossing frequently, until the vegetables wilt and start to blister. Set aside in a bowl.
- Allow the wok to cool down for a minute. Add a little more oil and stir fry the onions over high heat for 2-3 minutes.
- Stir in the minced garlic and ginger and mushrooms and cook for a further 30 seconds or until the garlic is fragrant.

- Add the pork and cook over high heat, using a wooden spoon to break it up. Cook for 3-4 minutes, adding some of the sauce halfway through so the pork is nicely browned.
- Return the green beans and broccolini to the wok, add the remaining sauce and cooked noodles and toss together to combine.
- Serve garnished with the green onions and some extra chili sauce on the side for the spice lovers!

Ground Pork Stir Fry in the Air Fryer
- I started using the air fryer to get a good blister on the green beans… then I decided to make the entire stir fry in it. Here’s how its done:
- Preheat the air fryer to 350°F (180°C) for 2-3 minutes. Drizzle the basket with a little oil, add the green beans and broccolini and cook for 8-10 minutes, shaking the basket often.
- Reduce the heat to 320°F (160°C). Add the onions, mushrooms, garlic and ginger. Stir well to combine and air fry for 5 minutes, shaking once or twice and transfer the vegetables to a bowl and set aside.
- Increase the heat to 400°F (200°C). Drizzle the air fryer basket with a little oil and add the ground pork, breaking it up with your spoon. Cook for 5 minutes, stirring once or twice.
- Add some of the sauce and cook until the pork starts to caramelize in places. Stir in the remaining sauce and cooked vegetables and cook for 2-3 minutes.
- Add the noodles and toss to combine. Cook for 2 minutes and serve garnished with the green onions.

Recipe Notes
- This stir fry works well with ground turkey, chicken or beef, although the pork version is my favorite. Leave the meat out for a vegetarian version.
- You can use other vegetables instead or in addition to the ones I have specified. Sliced peppers, snap peas, cabbage, bean sprouts all work well. Remember you want the vegetables to stay pretty crunchy so you don’t need to cook them for too long.
- Replace the noodles with shirataki noodles which are suitable for low carb / gluten-free diets if preferred.
- Store leftovers in an airtight container for up to three days. Reheat in a skillet or microwave with a splash of water to loosen the sauce.
Get to Know The Ingredients
- Kecap Manis: This thick, sweet Indonesian soy sauce is made with soy and palm sugar, giving it a syrupy texture and molasses-like flavor. It adds depth, sweetness and shine to stir fries. If you can’t hold of it, replace with soy sauce and a little honey or sugar.
- Sambal Oelek: This Indonesian chili paste, made from ground red chilies, vinegar and salt, has THE most addicting flavor! Adding a little will add tons of flavor to your stir fry without adding too much heat. Increase the amount depending on how spicy you like your dishes! Replace with Chiu Chow Chili oil or Sweet Chili Crisp.

- 3 cloves garlic , chopped
- 2 tsp minced ginger
- 4 green onions , sliced, to garnish
