An easy ground beef stir fry packed with noodles, veggies, and bold Asian-inspired flavors. A one-pan dinner that’s fast, customizable, and absolutely delicious.
Cook the noodles according to pack instructions, rinse in cold water and drain. Alternatively you can use "straight to wok" noodles or fresh noodles that don't require cooking.

Heat some of the oil in a large skillet or wok over high heat until it is smoking. Add the green beans and broccolini in a single layer and cook for 2-3 minutes, tossing frequently, until the vegetables start to blister. Set aside in a bowl.

Allow the wok to cool down for a minute. Add a little more oil and stir fry the onions over high heat for 2-3 minutes.

Stir in the minced garlic and ginger and mushrooms and cook for a further 30 seconds or until the garlic is fragrant.
Add the pork and cook over high heat, using a wooden spoon to break it up. Cook for 3-4 minutes, adding some of the sauce halfway through so the pork is nicely browned.

Return the green beans and broccolini to the wok, add the remaining sauce and cooked noodles and toss together to combine.
Serve garnished with the green onions and some extra chili sauce on the side for the spice lovers!

Air Fryer Instructions
Combine all the ingredients for the sauce in a small bowl and set aside. Cook the noodles according to pack instructions, rinse in cold water and drain.
Preheat the air fryer to 350°F (180°C) for 2-3 minutes. Drizzle the basket with a little oil, add the green beans and broccolini and cook for 5-6 minutes, shaking the basket often. (Note: You might need to adjust the temperature depending on your air fryer model).

Reduce the heat to 320°F (160°C). Add the onions, mushrooms, garlic and ginger. Stir well to combine and air fry for 5 minutes, shaking once or twice and transfer the vegetables to a bowl and set aside.

Increase the heat to 400°F (200°C). Drizzle the air fryer basket with a little oil and add the ground pork, breaking it up with your spoon. Cook for 2-3 minutes, stirring once or twice.

Add some of the sauce and cook for a few more minutes until the pork starts to caramelize in places. Stir in the remaining sauce and cooked vegetables and cook for 2-3 minutes.
Add the noodles and toss to combine. Cook for 2 minutes and serve garnished with the green onions.

Note 1: Kecap Manis (ketjap manis) is sweet Indonesian soy sauce. If you can't hold of it, replace with 1 tbsp dark soy sauce and 2 teaspoons of honey or sugar.Note 2: Sambal Oelek (or sambal ulek) Indonesian chili paste – replace with Sweet Chili Crisp or Chili Garlic Sauce.Note 3: I used beech mushrooms (shimeji) which cook quickly and don't require slicing.
