Cocktail Friday broadcast is going out slightly later than usual today. Busy day… busy, busy day… 
All the more reason to indulge in a cocktail, especially a sunny one like this Kiwi Lemongrass Caipiroska, since the weather in Londontown has been anything but sunny lately. My husband described it as ‘not so much July as a soft launch for October’ and it really has been dreary, gloomy, rainy and 50 shades of miserable lately – at least where I am. I have been reliably informed that the sun shines elsewhere but I am not sure I believe it.

This is another super easy cocktail which doesn’t call for a shaker and only one spirit – vodka. If you happen to somehow have Kiwi Schnapps in your cupboard feel free to add some but I can’t say I have ever come across anyone who does…

Caipiroska
Kiwi lemongrass Caipiroska

Kiwi lemongrass Caripiroska 
Serves 2
1 kiwi, peeled and cubed
1 lime, cut into wedges
3 tsp sugar syrup
4 measures | 100ml | About 4 oz vodka

1 lemongrass stalk, very finely chopped
Plenty of crushed ice
Lemongrass stalks to stir (optional)
Slivers of kiwi fruit to decorate

Method
1. Peel the lemongrass of the tough outer layers and finely chop the soft centre.
2. Put the kiwi, lime, lemongrass and sugar syrup in a glass and muddle together.
3. Divide the kiwi/lime pulp into two rocks glasses and fill with crushed ice. Pour over the vodka (2 measures per serving) and stir thoroughly.
4. Serve decorated with a fine sliver of kiwi and a lemongrass stalk as a stirrer.

    Cocktail sounds delicious. I got Kiwi Schapps in Crete once, but haven't seen it anywhere else.
