All it takes is five minutes prep time and a handful of ingredients plus a little Crockpot magic. I am a total convert – take a look at the recipe video to see just how ridiculously easy they are to make.
Chicken Fajitas have been a family favourite for a few years – a chicken dish that both my fussy kids will eat happily and ask for seconds. Minor miracle!
My husband usually makes fajitas for them as a weekend treat using one of those ‘fajita kits’ that come with a packet mix of seasoning.
If you are short of time for hands on cooking then make these chicken fajitas in your slow cooker. If you have a bit of time you can prepare them the traditional way in a frying pan or bang them in the oven on a sheet pan.
Slimming World Fajitas
Meet your new favourite Slimming World Chicken Recipe! You don’t have to change anything other than swap to a low calorie cooking spray to make SW chicken fajitas.
They are totally FREE (yay!) and you can even make them suitable for Extra Easy SP by serving them in lettuce wraps or over cauliflower rice.
I personally love them served over brown rice or as a jacket potato filling for a Gluten Free option.
If you do use tortillas to serve them, look for Weight Watchers Tortilla Wraps – one wrap is allowed as a healthy extra B. Any additional wraps are 6 syns each however… so keep that in mind!
Ingredients
I have kept this recipe to the bare minimum ingredients. Here’s what you will need
- Skinless chicken breasts
- Bell peppers – use one green, one red and one yellow/orange to make the dish more colourful
- Red Onions
- One tomato – replace with tomato paste for sheet pan /frying pan methods
- Homemade fajita seasoning – mild or hot chilli powder, paprika, ground cumin, garlic granules, sweetener and dried oregano
- Lime Juice
- That’s it!
Slow Cooker Chicken Fajitas
Full measurements and instructions can be found on the printable recipe card at the bottom of the page. Please take a look at the steps and video before attempting this recipe!
STEP 1. Add the onions, peppers,diced tomato and chicken breasts into your slow cooker.
STEP 2. Add the seasoning and spices and toss to combine. Squeeze the lime over it all.
STEP 3. Cover and cook on HIGH for 2 hours (it’s really quick!) or on LOW for 3-4 hours.
STEP 4. Use two forks to shred the chicken and check the seasoning. Add salt and pepper if needed. Serve over corn wraps or see my other suggestions.
Sheet Pan Chicken Fajitas
Replace the sliced tomato with two tablespoons of tomato purée for this method.
STEP 1. Preheat the oven to 200C /400F. Spray a large rimmed sheet pan with low calorie cooking spray.
STEP 2. Combine the chicken, seasoning and lime juice in a large bowl. If you have time leave to marinate for an hour (or overnight) otherwise you can use straight away.
STEP 3. Add the peppers and onions to the chicken and toss to combine. Spread in an even layer on the prepared baking tray.
STEP 4. Cook for 15 minutes in the centre of the oven.
STEP 5. Switch to grill (broiler) and transfer the tray to the top rack, a few inches away from the grill. Cook for 4-5 minutes until the vegetables are a little charred – keep an eye on them.
STEP 6. Use two forks to shred the chicken into smaller pieces. Check the seasoning and serve.
Stovetop Method
Replace the sliced tomato with two tablespoons of tomato purée for this method.
STEP 1. Slice the chicken into thin strips. Combine the chicken, spice mix, tomato purée and lime juice in a large bowl. If you have time leave to marinate for an hour (or overnight) otherwise you can use straight away.
STEP 2. Add all the vegetables to the chicken and toss to combine.
STEP 3. Spritz a frying pan with low calorie cooking spray such as Fry Light. Pan fry the chicken, onions and peppers over high heat for about 8-10 minutes, or until the chicken is cooked through.
STEP 4. Check the seasoning and serve with your choice of sides.
Serving Suggestions
Serve over warm flour tortillas (or WW wraps) with a little fat free yogurt, grated cheddar cheese and shredded lettuce. You can also serve them in lettuce boats to shave a chunk of calories.
Serve over brown or white rice, couscous or cauliflower rice. They also make a mean jacket potato filling!

Can you freeze Chicken Fajitas? To be honest, these are so easy to prepare and so popular that they never make it to the freezer… Leftovers keep well in the fridge for a couple of days. Make sure to reheat any leftovers until they are piping hot before serving.
Slow Cooker Chicken Fajitas

Ingredients
- 450 g (1 lb) skinless mini chicken fillets (chicken tenders)
- 2 red onions , sliced into thin strips
- 1 red bell pepper , sliced into thin strips
- 1 green bell pepper , sliced into thin strips
- 1 yellow or orange bell pepper , sliced into thin strips
- 1 tomato, seeded and diced replace with 2 tbsp tomato paste for sheet pan & frying pan methods
- 3 tsp granulated sweetener such as Sukrin (optional)
- 1 tsp mild chilli powder use cayenne pepper for spicier fajitas
- 1 tsp smoked or sweet paprika
- 1 tsp ground cumin
- 1 tsp garlic granules
- 1 tsp dried oregano
- 1 tsp salt
- Juice of half a lime plus extra wedges to serve
- Coriander (cilantro)leaves to garnish
- salt and pepper to season to taste
