I love making salmon bites in my air fryer. They cook incredibly quickly, with slightly crispy edges and perfectly tender, flaky middles.
Even people who aren’t salmon lovers will become converts once they have a taste of these crispy salmon bites.
You can make salmon bites with very few ingredients – just some seasoning and a quick spray of oil. While I love this option for speed and convenience, I make these Asian-style salmon nuggets when I want something a little special!
AIR FRYER SALMON BITE INGREDIENTS
We will be using a marinade made with sesame oil, rice vinegar, soy and hoisin sauce, honey, sugar, garlic and ginger. A little cornstarch will turn the marinade into a delicious sauce. You can replace the honey and sugar with keto friendly options if preferred.
For the salmon you want to pick some skinless salmon filets. I prefer farmed salmon in this recipe as wild salmon can dry up in the air fryer. Make sure the fish is fresh and firm.
A sprinkling of Furikake seasoning and sliced chives or spring onions and you have an uber-delicious salmon dish that the whole family will love.
HOW TO MAKE AIR FRYER SALMON BITES

Combine all the marinade ingredients – sesame oil, sesame oil, rice vinegar, soy and hoisin sauce, honey, brown sugar, minced garlic – in a bowl. Transfer half of the marinade into a saucepan.
Slice the salmon fillets into evenly sized cubes. Add the salmon pieces to the marinade bowl and gently mix together.
Preheat the air fryer for 2 minutes at 400°F / 200°C. Place a silicone liner into the air fryer basket (makes clean up a lot easier) and spread the salmon cubes over it in a single layer. You will need to cook in batches, depending on the size of your equipment.
Cook for 4-5 minutes or until the salmon is slightly caramelised at the edges but still juicy and tender within. Use tongs to transfer the salmon into bowls or plates.
Add cornstarch slurry to the saucepan with the marinade and stir over medium heat for a few minutes until slightly thickened.
Serve the salmon bites with the sticky sauce, sprinkled with Furikake seasoning or toasted sesame seeds and finely diced spring onions.
SERVING SUGGESTIONS
I love making salmon rice bowls to turn this quick salmon recipe into a full meal. If I am in a hurry then I use microwave sticky rice, sliced avocado and veggies.
Instant noodles or these spicy garlic ramen are a great alternative to rice. If you would rather keep this meal high protein and low carb then stick with steamed vegetables or shirataki noodles.
COOK THE PERFECT AIR FRIED SALMON NUGGETS
- For crisp yet tender salmon bites preheat your air fryer first.
- Use a silicone liner to prevent the salmon from sticking, allow the marinade to not drip through and to make clean-up a breeze.
- Since the marinade is packed with umami goodness we are not adding any extra salt. See recipe notes if you want to skip the marinade.
- Salmon cooks quickly in the air fryer and even more quickly when diced into cubes. Air fry for 4-5 minutes adding an extra minute or so until it is cooked to your liking.
- Take the salmon out of the air fryer as soon as it beeps to avoid it overcooking and becoming dry.
- If using frozen salmon allow it thaw overnight in the refrigerator before making this recipe.

RECIPE NOTES
Store leftovers in a suitable container in your refrigerator for up to two days. Reheat in the air fryer at 400°F / 200°C for a few minutes.
No marinade? No problem! Simply season your salmon chunks with garlic powder, salt, pepper and your fave seasoning – I suggest Cajun or Old Bay seasoning. Mist the salmon with olive oil spray and cook as instructed.

- 5 salmon filets , skinless
Marinade
- ⅓ cup (80g) hoisin sauce
- ⅓ cup (80g) soy sauce , dark
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 2 tsp ginger , minced (thumb-sized piece fresh ginger)
- 2 garlic cloves , minced
- 2 tbsp honey or Keto friendly equivalent
- 1 tbsp brown sugar or Sukrin Gold
To thicken marinade
- 1 tsp cornflour (cornstarch) diluted in a little cold water
To serve
- 5 spring onions , green part only, finely diced
- 1 tbsp toasted sesame seeds or Furikake seasoning
