I hear that more and more people are using their Air Fryers to make their Christmas dinner this year. No wonder – it is so much cheaper to run than the oven and we are all trying to save on our energy bills.
Lucky then that Air Fryers are SO VERSATILE! You can cook a turkey crown, fabulous rib of beef, Yorkshire Puddings and so much more.
Take this Air Fryer Gammon recipe for example. Lots of people wonder “can you cook gammon in the air fryer?”. YES YOU CAN! It is so easy – let me walk you through it!

GAMMON JOINT IN AIR FRYER
I used my Cosori 5.8QT to cook a small gammon joint. A larger joint may require a different Air Fryer model such as this Tower Air Fryer Oven. As long as the joint fits easily in your air fryer basket you are good to go!
Other than the gammon you need just a few ingredients to make a glaze. I used redcurrant jelly, wholegrain mustard and a little orange juice.
You can use any type of smooth jam or honey as well. For a festive presentation, you can stick cloves in the rind before adding the glaze.
HOW TO MAKE AIR FRYER GAMMON

Take the gammon out of the fridge and bring it back to room temperature before cooking. Cut two large pieces of foil and place them in a cross shape on your countertop. Place the gammon in the middle and wrap with the foil until it is completely and tightly covered.
Preheat the Air Fryer for 5 minutes at 170°C (340°F). Place the foil covered gammon in the air fryer basket. Cook for 40 minutes (this is dependent on the weight of your joint – check the recipe notes).
The gammon is cooked when an instant read thermometer inserted into the thickest part reads 62 °C (145 °F). The temperature will rise a bit further when you add the glaze. The ham should be easy to pierce with a knife and you should be able to pull it out without a struggle. If it is not cooked yet then continue to cook (covered in foil) until it reaches the right temperature.
Prepare the glaze
Put all the ingredients in a saucepan, bring to a simmer and cook for a few minutes until the glaze reduces and becomes syrupy. Set aside.
Take the gammon out of the fryer. Peel back the foil and use a knife to remove the rind from the gammon joint, leaving a thin layer of fat. Use a sharp knife to lightly score the fat in a diamond pattern. You can stick cloves in each diamond before glazing if you like.
Liberally brush the ham with the glaze. Return to the air fryer for 5 minutes at 200°C (400°F). Repeat once or twice until the ham is crispy on top.
Transfer to a platter and rest for 10 minutes before slicing. Serve warm or cold.
RECIPE NOTES
- If you are concerned about the ham being too salty then put in a large pot and cover with cold water. Soak for 30 minutes- 1 hour, changing the water three to four times.
- Store any leftovers in the fridge for up to four days. Leftover ham is fantastic in Pea and Ham Soup, in Carbonara or in place of bacon in my Chicken Pasta Bake and Crack Chicken Soup. Slice it thinly to use in sandwiches with my Air Fryer Bread.

- The weight of your gammon will affect the cooking time, as will the efficiency of your Air Fryer. Rule of thumb dictates 20 minutes per 450g (1lb) + 20 minutes cooking time however it is best to check the temperature with the thermometer for best results.

You might need to add to the cooking time – not all air fryers are built the same, some are more efficient than others

Hi Lucy, the Food Standards Agency recommend an internal temperature of 70degrees for 2 mins. And other recipes say to cook until 72 or 75 degrees. Im wondering why you say a lower temperature?

The ideal temperature for a properly cooked gammon is 155℉(68℃). Once taken out of fryer the meat will continue to cook with its internal heat. The meat of the gammon will be able to reach up to 160℉(71℃) in temperature

OK! I’m still confused because you say cook to 62 degrees? My joint is much bigger than yours so am just cooking it u till the internal temperature is correct but I’m really struggling to know what that is!!

Hi Vicki – if it registers 62 then it is cooked. You can pull it out a couple of degrees before it reaches that temperature.
