The holiday season can be stressful if you’re playing host, so everyone needs at least one go-to appetizer option. These cranberry brie bites are the ideal bite-sized app, a simple appetizer with just three ingredients and unbelievably quick to make in your air fryer.
Who can resist the ultimate combination of sweet cranberry sauce and melty brie cheese? (spoiler, not me!!)
BRIE AND CRANBERRY PUFF PASTRY BITES INGREDIENTS
Puff pastry: Store-bought puff pastry can be your best friend during the festive season – and besides, who has time for homemade puff pastry? Each puff pastry sheet should be enough for 35 small puff pastry bites, or about 15 large ones, so plan accordingly.
Brie: This soft cow’s-milk cheese makes all the difference, with the creamy brie cheese underpinning the cranberry’s sweetness perfectly. You could always swap the brie appetizer for one using goat cheese, but brie offers a beautiful cheesy taste without being overwhelming and is a classic complement to the cranberry sauce.
Whole cranberry sauce: This adds sweet bursts and texture that makes all the difference. Store-bought cranberry sauce is fine. If want to try making homemade cranberry sauce, that’s fine, but this saves loads of time.
HOW TO MAKE AIR FRYER BRIE AND CRANBERRY BITES

STEP 1 Take the puff pastry out of the fridge and allow it to come to room temperature for five minutes. Unroll the puff pastry, leaving them on the paper it came rolled in.
STEP 2 Use a pizza wheel or a sharp knife to cut out 2-inch (5 cm) squares in the puff pastry sheet. Gather any leftover pastry and roll out again to use.
STEP 3 Spray a square muffin pan with cake release or oil, making sure to grease each muffin cup. Add a square of buttery puff pastry to each muffin hole and flatten the middle slightly with your fingertips. Brush with the egg wash.
STEP 4 Add a teaspoon cranberry sauce to each of the puff pastry cups. Place a cube of cheese on top of the cranberry.
STEP 5 Preheat the air fryer to 180°C (350°F). Place the muffin tray into the basket and bake for approximately 8 minutes or until the pastry is golden and the cheese melted. Rest for a minute then use tongs to remove from the pan.
STEP 6 Decorate with a sprig of rosemary and a few fresh cranberries and serve hot to your guests!
STORING BRIE AND CRANBERRY PUFF PASTRY BITES
I’m not sure how you would end of with any leftovers of this delicious and easy appetizer, but if so, you can store them in an airtight container and they will keep in the fridge for 3-4 days. You can also reheat them in your air fryer (5 mins at 180°C / 350°F).

What’s the main thing to know about these puff pastry bites? Don’t overfill! You don’t want the melted brie cheese to escape the puff pastry shell or prevent the pastry from puffing.
Does it have to be cranberry sauce? Not at all, there are loads of options, from fig jam to blackberry jam, apricot jam or raspberry jam, whatever works with brie. You can even use a tart cranberry sauce if that’s your preference.

- 375 g (13oz) puff pastry sheet , ready-rolled
- 1 small egg , lightly beaten
- 100 g (3 ½ oz) whole cranberry sauce
- 200 g (7oz) brie , cut into small squares
- sprig rosemary or fresh thyme , to garnish
Instructions
- Take the puff pastry out of the fridge to come to room temperature for a few minutes.375 g (13oz) puff pastry sheet
- Unroll the pastry, keeping it on the paper it came rolled into. Use a pizza wheel or sharp knife to cut the pastry into squares (12 large or 24 smaller squares).
- Mist the muffin tray with cake release or oil spray. Place a puff pastry square in each hole, lightly flattening the middle with your fingertips. Brush with the beaten egg.1 small egg
- Place a teaspoon of cranberry sauce on top of the pastry and top with a cube of brie.100 g (3 ½ oz) whole cranberry sauce, 200 g (7oz) brie
- Preheat the air fryer to 180°C (350°F) and bake, in batches, for about 8 minutes or until the puff pastry is puffed and golden and the cheese has melted.
- Rest for a minute then use tongs to remove from the muffin tray. Repeat with the remaining pastry.
