If the history behind NERGI® doesn’t intrigue you enough, then let me tell you a little more about them. They are super cute, I mean adorable. They are intensely fragrant and flavourful – much more than the fruit they so closely resemble – with an addictive sweet/tangy taste. Unlike kiwis, they are fuzz-free and require no peeling making them perfect adding to lunch boxes as a healthy snack. And the best part, for me anyway, is that kids love them – I had to practically wrestle our neighbour’s determined toddler from scoffing the lot.
There’s many (healthier) ways you can eat the NERGI® fruit berries but I was seduced by their looks and taste I really wanted to try them in a cocktail. And I was not disappointed – I can’t wait to make margaritas with these babies.
Kiwi Berry Collins
8 NERGI® fruit berries, roughly chopped
80ml | 2.7fl oz gin
Juice of 1 lime
2-3 tsp sugar
chilled soda water to top up
thin slices of NERGI® fruit berries to decorate
- Put the NERGI® fruit berries, gin, lime juice and sugar in a cocktail shaker or large jug.
- Use a muddling spoon (or the end of your rolling pin) to press down on the berries until you have a smoothish pulp.
- Fill two rocks glasses with plenty of fresh ice. Strain the cocktail over the ice.
- Top up with soda water and stir. Thread the baby kiwi slices onto cocktail sticks to decorate.
Notes: The less soda water, the more concentrated the taste and intense the colour.
