If the festive round-the-clock cooking has you frazzled then why not finish your dinner with a sweet Mudslide drink instead of pudding?

This easy-sipping Baileys cocktail is a cross between drink and dessert – liquid dessert anyone? I think it makes an excellent Christmas drink garnished with a candy cane 😉

What’s in a Mudslide Drink

A very easy three ingredient cocktail that looks perfectly sweet and innocent but nevertheless packs a bit of a punch.

The Mudslide has an easy 1:1:1 ratio which makes it suitable for scaling up to serve at a party. If this reminds you of the White Russian then you are right on the money – it is a very similar cocktail. Let’s take a look at the ingredients.

BAILEYS IRISH CREAM A creamy sweet liqueur made with Irish whiskey, cream, sugar and cocoa. Baileys have introduced a few variations on the classic Irish Cream liqueur including vegan and flavored versions. Although Baileys is the original Irish cream you can find cheaper generic Irish cream liqueurs on the market.

KAHLUA This rich dark liqueur is made with rum, sugar, vanilla and coffee. Delicious over ice, in cocktails and desserts. You can use other coffee liqueurs in your Mudslide drink such as Tia Maria, Patron Coffee or a cold brew liqueur such as Mr Black.

VODKA You can use any standard vodka in this cocktail or perhaps a flavoured coffee vodka (Vanilla, Coffee or Caramel)  to enhance the overall flavor.

How to make a Mudslide cocktail

Most Mudslide recipes require you to shake the ingredients in a cocktail shaker full of ice before straining into a rocks glass filled with ice. I prefer the stirring method because sometimes you can be on holiday without a shaker… shocking I know!

STEP 1. Drizzle chocolate syrup on the inside of a rocks glass – hold the glass in one hand at an angle and drizzle the syrup with the other, turning the glass as you do. Chill in the freezer.

STEP 2. Fill a cocktail jug with fresh ice. Pour the vodka, Kahlua and Baileys over the ice.

STEP 3. Use a bar spoon to give a good stir – this chills the cocktail and dilutes it ever so slightly.

STEP 4. Fill your prepared glass with ice and strain the cocktail over it. Garnish with a fine grating of chocolate if you like and enjoy! For a festive Mudslide variation add a candy cane as decoration.

Frozen Mudslide

Now this version really is dessert for adults only! You can make it as indulgent as you dare… For a lighter version blend the ingredients without the ice cream.

  • Your trio of Baileys, vodka and Kalhua
  • Ice (crushed ice to make it easier on your blender)
  • Vanilla ice cream (or even chocolate or caramel)
  • Whipped Cream to top (from a can is fine)
  • Chocolate syrup and chocolate shavings

STEP 1. Drizzle a tall glass (hurricane glass or sundae glass) with chocolate syrup – hold the glass in one hand at an angle and drizzle the syrup with the other, turning the glass as you do. Place glass in the freezer while you prepare your cocktail.

STEP 2. Add the ice, vanilla ice cream,  Kalhua, vodka and Irish cream to a power blender and blend until smooth. Pour into your glass filling ¾ of the way.

STEP 3. Top with whipped cream, drizzle a bit more chocolate sauce on top and add chocolate shavings or other toppings.

Mudslide Variations

  • Irish Mudslide – replace the vodka with Jameson Irish Whiskey perfect for St Patrick’s Day!
  • French Mudslide – replace the vodka with brandy.
  • Mudslide Hot Chocolate – a boozy hot cocoa! Use my White Hot Chocolate and stir in the three spirits just before serving.

Can I make this for a crowd of about 25 people?

Oh goodness – I guess you could. Don’t add any ice cubes until serving it will dilute the drink too much just keep the mix in the fridge
