Cowboy butter is a garlicky, spicy, herby butter sauce blowing up online, and it turns out it’s phenomenal on pasta. Think garlic butter with a wild side – smoky paprika, mustard, red pepper flakes, fresh herbs and a tangy zing of lemon.

I recently made cowboy butter for my Air Fryer Filet Mignon (still can’t get over how amazing that was!). My leftover compound butter was begging me to use it and turns out it is 🤌 in this easy pasta dish!!

Here’s What You’ll Need

Creamy chicken pasta is a big hit with our family, but this cowboy butter version is seriously one of the most delicious. Let’s take a look at what you will need:

  • Chicken thighs: Skinless and boneless thighs stay extra tender when seared. Slice into strips for quick cooking and season with paprika, garlic granules, salt and pepper. Add a pinch of cayenne pepper for a spicy kick!
  • Cowboy butter: This is the recipe’s MVP! It’s deceptively simple, made with unsalted butter, garlic, paprika, Dijon mustard, lemon juice, chili flakes and parsley, but it’s a bold, zesty flavor you cannot forget.
  • Shallots: Milder than regular onions, shallots add sweetness and a gentle savory base to the sauce. Finely slice for even cooking.
  • Sliced garlic cloves: Thinly sliced garlic infuses the butter sauce with rich, aromatic flavor. Don’t rush this – it’s an essential part of that cowboy butter pasta magic.
  • Peppers: Use a mix of red, yellow and orange bell peppers for color and a sweet, fresh crunch.
  • Reserved pasta water: This starchy liquid is your secret weapon for creating a silky, clinging sauce. Don’t forget to save some before draining the pasta!
  • Linguine pasta: You can freestyle and use any type of pasta but I think linguine holds the sauce beautifully. Fettuccine, spaghetti, penne and so on are all good options too – go with your favorite!
  • Heavy cream (a.k.a double cream): Just a splash adds richness and rounds out the heat. You can substitute with half-and-half or cream cheese if preferred.
  • Freshly grated Parmesan: The boxed stuff is dusty and lacking in flavor. Always grate fresh to make the best of this umami powerhouse!
  • Chopped fresh parsley: I always add a sprinkle of fresh herbs to instantly elevate my pasta dishes. Parsley works best, but you can use chives or even basil for a twist.
  • Lemon slices: A squeeze adds a bright acidic note that lifts the creamy sauce.

How to Make Cowboy Butter Pasta

Make the Cowboy Butter

  1. Combine all the ingredients together in a small bowl and set aside. This can be made up to three days om advance and kept in the fridge, covered, until needed.

Prepare the Pasta

  1. Bring a large pot of salted water to the boil. Add the pasta and cook according to pack instructions or until al dente. Reserve some of the pasta water before draining the pasta.

Bring It All Together

  1. Prepare the rest of the dish while the pasta cooks. Cut the chicken thighs into strips or bite-sized pieces. Add the seasoning, tossing to combine.
  2. Heat olive oil in a large skillet or chef’s pan and quickly sear the chicken over medium-high heat. This will take about 4 minutes – you don’t have to cook the chicken all the way through.
  3. Lower the heat a notch. Add the shallots, garlic and sliced peppers and continue to cook, stirring frequently, until the vegetables have softened and chicken is cooked through.
  4. Stir in the cowboy butter and add the linguine, tossing to combine in the buttery sauce.
  5. Add the cream, grated Parmesan and chopped parsley and stir well to combine. Have a taste and adjust the seasoning as needed.
  6. Serve immediately with lemon wedges on the side and some extra Parmesan cheese and perhaps some garlic bread. Serious comfort food vibes!

  • Feel free to add more veggies to the Cowboy Butter Sauce. Zucchini, fresh spinach, cherry tomatoes are all great options.
  • You won’t need all of the Cowboy Butter in this recipe – save the rest to use as a dip with roasted veggies or steak.
  • The pasta water goes a long way to create a silky sauce with velvety texture without too much cream. Although is there such a thing? Add as much or as little as you like!
  • Your chicken is cooked when it reaches an internal temperature 165°F (75°C) when checked with an instant read thermometer. Typically, the chicken strips will take approximately 8-10 minutes to cook over medium heat.

  • Create a Low-Carb / Keto Version: Swap the pasta for zucchini noodles (zoodles), heart of palm noodles or shirataki noodles. If using zoodles, toss them in during the last 60 seconds only – they release a lot of water if overcooked and will thin your sauce. The Cowboy Butter Sauce itself is naturally keto-friendly.
  • Tone Down the Heat – or Turn it Up! Cowboy Butter has a gentle kick from chilli flakes and paprika. For a milder version, halve the chilli flakes and omit the cayenne. For a spicier version, add extra red pepper flakes, a pinch of cayenne or a finely chopped fresh red chilli to the sauce.

Serving Suggestions

This pasta is a complete one-pan meal, but these sides take it over the top:

  • Garlic bread or garlic dough balls – essential for mopping up every last drop of that glossy butter sauce.
  • Roasted tenderstem broccoli – toss in olive oil and a pinch of chilli and roast alongside.

Leftovers and Storage

Leftovers: Store leftover pasta in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it sits — that’s totally normal.

Reheating: To prevent the creamy sauce from splitting, add the pasta to a pan over medium-low heat with a splash of water, milk or chicken stock. Stir gently and continuously as it heats to re-emulsify the sauce.

Frequently Asked Questions

Can you freeze Cowboy Butter Pasta?

Cream-based pasta sauces don’t freeze well as a rule – the dairy tends to separate when reheating and can become grainy. You can just prepare and freeze the Cowboy Butter and add cooked pasta later. Roll the prepared butter into a parchment-paper log and freeze for up to 3 months. Slice off what you need straight from frozen.

Can I make Cowboy Butter ahead of time?

Yes! Mix the Cowboy Butter up to 5 days in advance and keep it in an airtight container in the fridge or freeze it as mentioned above.

Can I use chicken breast instead of chicken thighs?

Yes – chicken breast works fine, but slice it into thin strips (1–2cm) and don’t overcook it. Thighs are more forgiving because the extra fat keeps them juicy even if they cook a minute longer. If using breast, keep a close eye on the timing – 3–4 minutes per side over medium-high heat is usually enough.

How do I stop the sauce from breaking or going greasy?

Two things matter most: don’t add cream to high heat (lower the heat first) and always use the reserved pasta water. The starch in pasta water acts as an emulsifier, binding the fat and liquid together into a silky, cohesive sauce. If the sauce does look greasy, stir in an extra tablespoon of pasta water off the heat – it should come together.

Can I make this gluten-free?

Yes – just swap the linguine for your favourite gluten-free pasta. Look for one made from chickpea or lentil flour for extra protein. Note that gluten-free pasta starch is slightly different, so your reserved pasta water won’t emulsify the sauce quite as effectively – add the cream a little more slowly and stir well.

Is this recipe very spicy?

No, it has a gentle warmth from chili flakes and paprika – most people would describe it as mildly spicy rather than hot. To make it milder, halve the red pepper flakes and omit any cayenne. To turn up the heat, add extra red pepper flakes, stir in some Sriracha or a finely diced fresh red chili.

What pasta shape works best with cowboy butter sauce?

Long, flat shapes like linguine, fettuccine and tagliatelle work especially well because the sauce clings to the flat surface area. Penne or rigatoni are great if you prefer shorter pasta – the ridges trap the sauce inside. Avoid very thin pasta like angel hair, which can overcook quickly and won’t hold the thick sauce as well.

For the Cowboy Butter

  • ½ cup (115g) unsalted butter softened
  • 1 tbsp Dijon mustard
  • 2 cloves garlic finely minced
  • 1 tbsp chopped parsley
  • 1 tbsp chopped chives

  • 12 oz (340g) pasta I used linguine
  • 2 tsp salt
  • 6 thighs chicken , skinless and boneless
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tbsp olive oil , or as needed
  • 1 large shallot , finely diced
  • 1 cup (150g) sliced bell peppers , mix of red, yellow and orange
  • 4 cloves garlic , sliced
  • 4 tbsp cowboy butter , or more to taste
  • ½ cup (120ml) heavy cream (= double cream)
  • 4 tbsp Parmesan cheese , freshly grated
  • 2 tbsp parsley , finely chopped

Instructions

    Made this last night. It was spure of the moment And I did not have fresh herbs; used dried herbs in same measurements given for fresh and it was still fantastic!! Great recipe so flavorful the family loved it!!

    I use whole bone in thighs skin on and cook them down first and it made a nice little crust in the bottom of the pan. That added to the flavor . Will make again ,…. Yummy
