What’s more, you can customize it to include all your fave vegetables, cheese, ham or whatever your fridge is hiding in that corner you never look into.
A frittata is a such great option when you’re looking for a satisfying breakfast or a light lunch. You can eat it hot or cold, pack it in a lunchbox or bring along to a picnic.
What is a frittata?
Those wonderful Italians have gifted the world this easy dish that is similar to an omelette or crustless quiche. The word loosely translates to “fried” and in this case it is air fried 🙂
A traditional frittata uses egg as its base but you can be flexible with the other ingredients. The smoked salmon works well here, but you could also use some pre-cooked salmon fillets, broken up into pieces, if you prefer.
Making a frittata in an air fryer is incredibly easy and you just need a tiny amount of oil, making it healthier as well. And you can always try different ways to spice up this deceptively simple dish.
For example, everyone says breakfast is the most important meal of the day so why not try salmon breakfast frittata with a bit of smoked bacon for added flavor?
IT’S THE LITTLE THINGS…
Speaking of breakfast, my most skipped meal ever, this was just one of the little things I am trying to change this year. I read this Guardian article “100 tiny changes to improve your life” and realized that sleep, or lack of it, is my biggest challenge.
So, after hours of research, I finally took the plunge and invested in a Simba Hybrid mattress (and their hybrid duvet / pillowcases) to replace our old lumpy one and followed the article’s advice to sleep on an incline (adding bed raisers).
It has made such a big difference to our lives, reducing my husband’s chronic snoring and improving my daily 3pm slump. Now if only our kitten gets the message and stops waking us up at 5am…
FRITTATA INGREDIENTS
You can freestyle once you have beaten the eggs, so this ingredients list is just a suggestion! Don’t add too much salt if you are using smoked salmon or bacon as it can make the dish too salty.
- Large eggs – 7-8 or more if needed
- Salt, pepper, garlic powder and dried herbs such as Italian seasoning or dried dill
- Chopped spring onions (scallions)
- Grated Parmesan (ready grated is fine in this recipe)
- Fresh spinach
- Cottage cheese – you can also use Quark, ricotta or cream cheese for a similar result
- Smoked salmon
- Fresh dill
HOW TO MAKE AIR FRYER FRITTATA

STEP 1 Add the eggs, herbs, garlic powder, salt and pepper to a large bowl and beat lightly to combine. You don’t want to beat the eggs too vigorously as this will cause your frittata to puff up like a soufflé!
STEP 2 Stir in the spring onions, grated Parmesan and most of the cottage cheese. Finally, stir in the chopped spinach and most of the smoked salmon.
STEP 3 Mist an 8 inch silicone cake tin with oil (the dish size will depend on the size of your air fryer – it should sit flat within the basket to cook evenly). Place in the air fryer basket and preheat for 3 minutes at 180°C / 360°F
STEP 4 Pour the egg mixture into the prepared pan. Top with dollops of cottage cheese, a few more pieces of smoked salmon and sprigs of fresh dill (this was purely for presentation purposes – you can mix all the ingredients together if preferred).
STEP 5 Spray the top with a little olive oil and air fry 25-30 minutes, until the top is golden brown and the frittata is mostly set.
STEP 6 Carefully flip the frittata over onto a liner (or the insert of an 8inch loose-bottomed cake tin). Add to the air fryer basket and cook for a further 10-15 minutes, or until golden.
STEP 7 Serve your smoked salmon frittata hot or cold, with a side salad – a great choice for a light lunch. Any leftovers can be stored in an airtight container in the fridge for up to 3-4 days. You can reheat in the air fryer, about 5 minutes at 180°C / 360°F should do it. You can also reheat in the microwave or simply eat it cold.

- Rest for a few minutes before slicing and serve on its own or with a green salad.
