Make the BEST EVER barbecue ribs in your oven! Fall-off-the-bone tender and covered with an addicting barbecue sauce, these are truly delicious and so easy to make!

Heatwave. 4th of July. Summer. What do all these add up to? Barbecue, right? Well, yes. But if there’s one thing you can count on in the UK, it’s that the weather will be unpredictable. 

The temperature is soaring but you have a thunderstorm on your hands instead of BBQ weather… Well, no need to change your plans, you CAN make finger-licking, sticky, smoky, melt-in-the-mouth tender barbecue ribs in your oven!

All you need is an easy dry rub, time and the right barbecue sauce – your oven will do the rest while you can take it easy over a drink or two… Just make sure you make enough ribs for everyone – no-one will be able to resist them!

Ingredients for Oven Barbecue Ribs

There’s three elements to this recipe: the ribs, the rub and finally the barbecue sauce. You can make your own rub using my recipe below or use your favorite mix. Same goes for the BBQ sauce – use a store-bought one or make your own.

  • Pork ribs: spare ribs or baby back ribs (wondering about what’s the difference between these two? Read more about it here).
  • Oil: brush the ribs with oil so that the dry rub sticks. You can use avocado or vegetable oil.
  • Pork dry rub: using a blend of paprika, cumin, garlic and onion granules, brown sugar, ground coffee, salt and pepper adds the right hint of smokiness and tons of flavor.
  • Barbecue sauce: my bourbon-spiked BBQ sauce is THE bomb (recipe in card below) but lately I have been using Sweet Baby Ray’s Original BBQ Sauce and it is so good.

How to Cook Ribs in the Oven

MAKE THE BBQ SAUCE

  1. Put all the ingredients in a small saucepan and stir together. Bring to the boil then reduce heat to a low simmer. Cook for 10 minutes, stirring occasionally, until the sauce is slightly thickened. Set aside to cool – this can be prepared in advance and kept in the fridge in a sealed jar.
  2. Dry the ribs using paper towels and place on a platter bone side up. Use a knife to get under the thin membrane that covers the bony side of the ribs and pull it off.

  1. Combine all the dry rub ingredients in a bowl. Brush the ribs with oil and sprinkle the rub over both sides.
  2. Line a baking tray with a large piece of aluminum foil and drizzle with a little oil. Place the ribs on top, bone side down, and wrap them tightly in the foil.

BAKE THE RIBS

  1. Preheat the oven to 180°C (350°F) and bake the ribs for 2 hours. Unwrap the foil parcel and slather the barbecue sauce over the ribs.
  2. Increase the oven temperature to 200°C (400°F) and set to grill (or broil). Cook for a further 5-10 minutes to get crisp edges.

REST AND SERVE

  1. Rest the ribs for 10 minutes then slice and serve with your best sides plus some extra barbecue sauce. Finger licking good!

What to Serve with Ribs

Pair your oven baked pork ribs with a variety of sides to turn them into a proper feast! I love serving them with a choice of salads such as my corn and avocado salad, Greek potato salad, cowboy caviar pasta salad plus smashed potatoes, mac and cheese and garlic bread. When it comes to drinks you can’t go wrong with a Beergarita!

BBQ sauce

  • 120 g (½ cup) ketchup
  • 60 ml (¼ cup) white wine or apple cider vinegar
  • 3 tbsp bourbon (optional)
  • 2 tbsp soft light brown sugar
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 2 tsp tamarind paste or 1 tbsp Worcestershire sauce
  • 1 tsp garlic granules
  • 1 tsp sea salt
  • ½ tsp cayenne pepper
  • ¼ tsp sweet smoked paprika
  • ¼ tsp ground black pepper

For the dry rub

  • 2 tbsp soft light brown sugar
  • 2 tsp onion granules or powder
  • 2 tsp garlic granules or powder
  • 2 tsp sweet smoked paprika
  • 1 tsp ground cumin
  • ½ tsp hot paprika or cayenne papper
  • 1 tsp salt
  • 1 tsp ground black pepper
  • ½ tsp ground coffee (optional – do not use instant)

For the ribs

  • 1 kg (2.2 lbs) ribs 2 racks of spare or baby back pork ribs
  • 3 tbsp avocado oil or as needed

Instructions

Notes

Reheat ribs in the air fryer or the oven at 135°C (275°F), adding some extra barbecue sauce to refresh them.
