I must admit to feeling pretty frustrated lately. Frustrated because even though I am doing what I love – for a living no less! – I still have days when I want to run and hide.

Frustrated because, even though when I post a recipe I only want to share something that works for me, the trolls still crawl out of the woodwork to criticise and throw negativity on everything.

I guess it’s the nature of putting something out there on the internet for people to either love or knock down. And it seems those who make a recipe and love it, are the least likely to be vocal about it. I take comfort in the fact that even famous chefs and food writers get huge backlash on occasion.

And even more comfort hearing from people who have made and loved my recipes – whether they reach out on Facebook, Twitter or Instagram.  So if you have made one of my recipes and want to say ‘hey’ please do so – it literally makes my day.

And if you made a recipe and it was a flop, please let me know what went wrong. Maybe I didn’t explain something clearly enough or I forgot to add an ingredient… I am only human.

All this to say that the expression ‘be careful what you wish for, you just might get it’ could not be truer. And that even if you are doing what you absolutely LOVE, you will still get down days and off days (or weeks or months).

I have never worked harder or learned more in any of my previous jobs. Food blogging is such an ever-changing beast and even when you think you have it figured out it goes and changes on you.

At least I take comfort in the fact that the online community is overwhelmingly supportive and loving. Some of my best friends IRL are friends I met through the blog and I could not be more thankful for them.

Next week I am going out for a meal with a few of those friends –  Julia of Vikalinka, Nicola of Kitchen Sanctuary, Natasha of Salt and Lavender and Deborah of Salted Mint. Some I know well, some I am meeting for the first time in person.

Hopefully there will be lots of chat, lots of food and a few cocktails for good measure. If I was hosting our get together at home I would be serving everyone a Knickerbocker cocktail to get the party started.

Kickerbocker Cocktail

What do you mean you have never heard of the Knickerbocker?? It is, admittedly, a vintage cocktail, circa 1905, but it tastes amazing and is due for a revival.

The Knickerbocker is a rum based cocktail and I have recently fallen in love with rum. In particular with rums that are somewhere between the spectrum of light and dark – like the Duppy Share and Mount Gay.

They make amazing Daiquiris (try a frozen one with jam – a riff on my new favourite strawberry jam Margaritas) and work really well in the Knickerbocker too.

The Knickerbocker

Ingredients

  • 50 ml | 2 measures | scant 2 fl oz dark rum
  • Duppy Share or Mount Gay are good options
  • 1 tbsp lemon juice
  • 2 tsp Cointreau or Triple Sec
  • ½ tsp sugar syrup
  • 2 raspberries frozen ones are fine
  • extra raspberries to garnish
  • lemon peel to garnish

Instructions 

  • Put the rum, lemon juice, Cointreau, sugar syrup, raspberries and plenty of ice in your cocktail shaker.
  • Shake really hard – the raspberries will be muddled as a result – and double strain into a tall glass filled with ice (I used a rocks glass instead).
  • Garnish with extra raspberries or some twisted lemon peel and sip through a straw.

    Delicious and beautiful!
    I agree….. blogging is a changing and very surreal (at times) world. I look on in envy at all of you who made a career out of it and get so frustrated that I make so little headway, trying to run my blog alongside a full time career. I guess I’d much rather blog, but simply can’t afford to. Plus I am no way as talented as most of you out there. Your blog is amazing and so I cannot imagine who would want to knock you down. Everything you post looks incredible, so if someone is trolling you, I reckon they are probably just jealous and bitter. Their problem, not yours!
    Have a fantastic time with your blogging friends and ignore any negativity…. xx
