Inspired by TikTok’s “soup dumpling lasagna,” this recipe combines a juicy, flavor-packed dumpling filling with wonton wrappers, then steams everything into a soft, tender and deliciously addictive dish. All the flavor of classic dumplings – garlic, ginger, soy, sesame – without the effort.

Instead of spending hours folding and pleating individual parcels, you simply layer pork mince, silky wonton wrappers, and tender cabbage into a dish to steam or bake.

The heart of this dish is a classic pork dumpling filling mixed with a few pantry staples:

  • Ground pork (pork mince): Ideally use slightly fatty ground pork (around 20% fat) to ensure the layers stay juicy and create a rich broth. Having said that, I have made this recipe using 5% fat meat with great success!
  • Cabbage: Finely shredded Napa cabbage or white cabbage bulks up the filling without weighing down.
  • Aromatics: Freshly grated ginger, minced garlic and green onions deliver authentic “potsticker” flavor.
  • Seasonings: A mix of soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar and white pepper.
  • Wonton wrappers: Dumpling wrappers replace the lasagna sheets in this recipe – steaming them brings out a beautifully silky texture.
  • Chicken broth / stock or water: A splash added before cooking creates steam and keeps our dumpling lasagne juicy.

How to Make Dumpling Lasagna

Time needed: 30 minutes

  1. Prepare the filling

    In a large bowl, combine the pork, shredded cabbage, aromatics, and seasonings.   2. Layer the filling and dumpling wrappers

    Brush a small baking dish or individual ramekins with a little sesame oil. Spread a thin layer of the pork mixture over the base and pack top.   3. Steam

    After assembling, pour a little stock water over the top. Place in a large pot and pour enough water to reach just under halfway up the sides of your baking dish. Cover the pot and steam for 15–20 minutes, or until the pork reaches 165°F (74°C) on an instant read thermometer.

  4. Rest and serve

    Rest for 5 minutes to allow the filling to set. Garnish with chili crisp, toasted sesame seeds, soy sauce and sliced chives. Top Tips for Success

  • Use a food processor to blitz the cabbage and green onions into a finely shredded texture – this makes them easier to incorporate into the filling.
  • Don’t add too much filling when layering: thin, even layers cook evenly and quickly and the final dish is easier to slice.
  • Allow the your dumpling bake to rest for at least 5 minutes – it becomes much easier to scoop or slice and you won’t burn your mouth (I speak from experience).

Frequently Asked Questions

Can I use different meat?

Yes, you can substitute pork with ground chicken or turkey, though you may want to add a little oil to keep it from becoming too lean.

Can I make this in one large dish?

Absolutely. If using a larger casserole dish, increase the steaming or baking time to 20-25 minutes and make sure the center is fully cooked. A square or rectangular dish makes assembly much easier, just fyi.

Can I bake this in the oven?

Preheat your oven to 350°F (180°C). Pour about 1/2 cup (125ml) of water or chicken stock over the top of the assembled dish. Cover the dish tightly with foil to prevent steam from escaping and place on a rimmed baking tray. Bake for 30 to 40 minutes.

For the filling

  • 1 lb (450 g) ground pork , ideally 20% fat
  • 1 cup cabbage , shredded in food processor, see note 1
  • 6 green onions , shredded in food processor
  • 4 cloves garlic , minced
  • 1 tbsp fresh ginger , grated
  • 2 tbsp soy sauce , low sodium
  • 2 tbsp oyster sauce
  • 2 tbsp Shaoxing wine or mirin
  • 2 tsp sesame oil , plus more for the dish
  • 2 tsp sugar
  • ¼ tsp white pepper
  • 20 wonton wrappers , or as needed
  • 4 tbsp chicken stock or water
  • water for the pot , as needed

To Serve

  • 2 tbsp chili crisp (chiu chow chili oil)
  • 1 tbsp soy sauce , or to taste
  • 3 tsp sesame seeds
  • 4 tbsp chives , finely chopped

Instructions 

Make the Filling

  • Cover the pot and steam for 15–20 minutes (or up to 25-30 if baking a large lasagna), or until the pork reaches 165°F (74°C) on an instant read thermometer.

Baking Instructions

Notes

  • Note 1: Use Napa cabbage or white cabbage, core removed.
  • Store in an airtight container in the fridge for up to 2–3 days 30, 31. Reheat by steaming again or microwaving under a damp paper towel to keep the wrappers soft.
