Here’s What You’ll Need
I used my Cosori Air Fryer for this recipe. It has a large basket which can make four extra large cookies or six smaller ones. You must use a liner in your air fryer when baking cookies to avoid mess and prevent them from falling apart.
- Softened (but not melted!) unsalted butter or baking spread
- Light soft brown sugar and granulated sugar
- Vanilla extract or vanilla bean paste
- Medium eggs
- Plain flour (all purpose) plus baking powder and soda.
- Sea salt
- Chocolate chips or chocolate bars chopped up into smallish chunks

How to make Air Fryer Cookies
- Put the butter, sugars and vanilla in a large mixing bowl or the bowl of your stand mixer fitted with the paddle attachment. Beat together until creamy, using a spatula to scrape down the sides of the bowl as needed.

- Add the eggs and continue beating the batter until they are incorporated.

- Add the flour and raising agents and continue mixing until the dough comes together. Now stir in 2/3 of the chocolate chips or chocolate chunks and chill the dough for 30 minutes or up to two days.
- Line the basket of the air fryer with a baking liner or parchment paper. Form balls of the dough, using a cookie scoop or about two tablespoons of dough. Press some of the reserved chocolate chips on the cookies.

- Cook for 10 minutes at 160°C (325°F). Take the basket out of the air fryer and leave the cookies in it to rest for five minutes or until firm enough to remove using a small spatula. Transfer them to a wire rack to cool completely. Store in an airtight container.

Recipe notes & tips
- Make sure to use a liner in your air fryer otherwise the batter and chocolate may melt through the basket. You can use parchment paper. but cut a few holes through it before hand.
- Space the cookies in the air fryer basket so that they have room to rise and spread.
- The cookies are ready when the edges start to color. In my Cosori air fryer, that took 10 minutes for large chocolate chip cookies. Other models may vary so do a test batch to determine the optimum cooking time.
- DO NOT, I repeat, DO NOT remove the cookies from the air fryer immediately after cooking. They are still soft and likely to fall apart. Leave them to cool for a few minutes before removing from the air fryer.
- Chilling the cookie dough before baking allows for the butter to solidify and the sugar and flour to absorb moisture. This will help the cookies spread less while baking and become lovely crispy yet chewy!
- Experiment with using dark and milk chocolate chips or roughly chopped chocolate bars in your cookies. Milk chocolate can make the cookies a bit too sweet so I recommend using a mix of dark and milk chocolate chips. Large chocolate chips are ideal for these cookies, if you can find them!

Baking these cookies in the oven
- Preheat the oven to 190°C /395°F. Scoop balls of the dough onto a reusable baking liner or baking parchment, placing slightly apart. Press extra chocolate chips on top of the cookies and flatten slightly.
- Bake for 12-13 minutes or until the cookies start coloring at the edges. Leave the cookies on the trays for five minutes then transfer onto a wire cooling rack. Store in an airtight container.

Ingredients
- 115 g (½ cup) unsalted butter , softened
- 150 g (¾ cup) light brown sugar
- 150 g (¾ cup) granulated sugar
- ½ tsp vanilla powder (optional)
- 2 medium eggs
- 1 tsp vanilla extract
- 320 g (2 ¼ cups) flour , plain / all purpose
- 1 tsp baking powder
- 1 tsp bicarbonate of soda (baking soda)
- ½ tsp salt
- 300 g (scant 2 cups) chocolate chips , or chopped chocolate bar
Instructions
- Measure the softened butter and sugars into your mixing bowl or the bowl of a stand mixer fitted with the paddle attachment. Beat together, scraping the bottom and sides of the bowl, until creamy.115 g (½ cup) unsalted butter, 150 g (¾ cup) light brown sugar, 150 g (¾ cup) granulated sugar, ½ tsp vanilla powder
- Add the eggs and vanilla and beat together until the eggs are incorporated. Use a spatula to scrape the sides and bottom of the bowl as needed.2 medium eggs, 1 tsp vanilla extract
- Mix in the flour, baking powder, soda and salt until the dough comes together.320 g (2 ¼ cups) flour, 1 tsp baking powder, 1 tsp bicarbonate of soda, ½ tsp salt
- Add 2/3 of the chocolate chips and beat them into the cookie dough. Chill for a 30 mins – 1 hour or overnight.300 g (scant 2 cups) chocolate chips
- Line the air fryer with baking liner or parchment paper. Form 4 balls of cookie dough (approx. 2 tbsp each) and place into the air fryer basket, spaced apart. Add extra chocolate chips (or chocolate chunks) on top of the cookie dough.
- Air Fry for 10 minutes at 160C (325F) or until the cookies start coloring at the edges. The cookies will still be quite soft and doughy at this stage.
- Take the basket out of the Air Fryer and leave the cookies in the basket for five minutes before carefully transferring onto a wire rack to cool. Store in an airtight container.
- Repeat with the remaining batter or keep it in the fridge for another day. Alternatively freeze the cookies on a tray prior to baking and cook straight from frozen, adding a couple of minutes to the cooking time.

2nd air fryer cookie recipe i’ve tried and both times the top has cooked but been completely raw inside i’m not sure why as i’ve made no substitutions and followed the recipe to a t any help or advice would be appreciated
Different air fryers can vary. It is important to rest the cookies in the basket once you have pulled it out so they can firm up before you take them out. Add a minute or more to the cooking time if it continues being an issue
