Chicken fajitas in the air fryer is a game changer! It is my go-to meal for busy weekdays as it cooks in, get this, just 15 minutes! Not only can you have dinner on the table in a flash, it is a HEALTHY dinner, full of colorful veggies, tender chicken and so much flavor!

You simply cut up the vegetables and chicken, add spices, chuck everything into the air fryer basket and hey presto it is done! The air fryer works its magic on the chicken and veggies – I honestly LOVE the juicy tender chicken and crisp-crunchy peppers and onions.

My kids adore having their air fryer chicken fajitas in a wrap, with grated cheese, salsa and sour cream. My husband and I usually opt for a low-carb option of a salad or serve them over rice when particularly hungry.

YOUR CHICKEN FAJITA GROCERY LIST

Just look at this list, it’s pretty short – told you it was quick and easy 🙂

  • Chicken: chicken breasts or chicken thighs (skinless and boneless) both work a treat. You can even buy ready sliced chicken strips if you are in a real time crunch.
  • Onion and bell peppers: I like to use red, green and yellow peppers!
  • Corn: fresh corn adds a pop of sweetness that I adore. You can use canned corn too if preferred.
  • Fajita seasoning: mild chili powder, garlic powder, sweet paprika, salt, freshly ground pepper and brown sugar. You can also use your favorite fajita seasoning blend of course.
  • Avocado or vegetable oil
  • Lime juice
  • Fresh coriander (cilantro)

HOW TO MAKE AIR FRYER CHICKEN FAJITAS

Full measurements and instructions can be found on the printable recipe card at the bottom of the page. Please take a look at the steps and video before attempting this recipe!

Slice the onion and peppers and cut the chicken intro strips. Use a sharp knife to cut the corn kernels off the cob. If you are using canned corn, drain well first.

Add all the ingredients to the basket of your air fryer (remove the rack if is detachable). Drizzle with the oil and add all the spices and seasoning. Mix well to coat the ingredients in the spices.

Air fry for 15 minutes at 190°C (375°F), shaking the basket halfway through so everything cooks evenly. You may need to cook for a little longer depending on your air fryer model – just make sure the chicken is cooked all the way through.

Have a quick taste to check the seasoning. Squeeze half a lime over the chicken fajitas and garnish with chopped coriander (cilantro).

SERVING SUGGESTIONS

These optional add-ons are up to you – here’s what my children love to load their fajita wraps (you can use wheat or corn tortillas) with:

  • sliced avocado or guacamole
  • grated cheese such as sharp vintage cheddar
  • shredded lettuce and chopped tomatoes
  • sour cream and salsa

RECIPE NOTES

HOW TO CHECK THE CHICKEN IS DONE: The safest way is to use a meat thermometer – the chicken needs to register 75°C (165°F). You can also slice the chicken strip to check if the meat is cooked through (there should be no pink meat).

DOUBLING UP THE RECIPE: You can double (or triple!) the recipe very easily but make sure not to overload your air fryer basket. You can cook it all in one you have a double basket air fryer model (they are SO useful!). If you have a smaller model then you will have to cook in batches.

  • 450 g (1 pound) chicken breasts, or chicken thighs
  • 1 white onion , finely sliced
  • 1 red bell pepper , sliced
  • 1 yellow bell pepper , sliced
  • 1 green bell pepper , sliced
