The air fryer love is still going strong at Supergolden Bakes. It is so easy to use and so versatile, whether you are making a roast chicken dinner or baking muffins and cakes.

Making muffins in the air fryer is easy. They cook quickly and rise beautifully and you don’t need any special equipment to make them.

This recipe simply asks you to combine dry and wet ingredients, fold in plump fresh blueberries, divide into muffin cases and bake in the air fryer. Super easy, right?

I made these muffins in my Cosori 5.8Qt Air Fryer using large paper muffin cases. You can also use silicone muffin cases if you like. Using cookie scoops for the batter is a great way to make evenly sized muffins.

The dry ingredients

  • Flour (all purpose / plain flour)
  • Sugar or you can also use a sweetener such as Sukrin Gold
  • Baking powder
  • Ground cinnamon

The wet ingredients

  • Melted butter or melted low fat spread / coconut oil
  • Vanilla yogurt (I used Activia) or you can use buttermilk
  • Large egg
  • Vanilla extract

And the rest

  • Fresh blueberries
  • Demerara or turbinado sugar for a lovely crunch

HOW TO MAKE AIR FRYER BLUEBERRY MUFFINS

Stir together the melted butter, yogurt, egg and vanilla extract in a large mixing bowl.

Mix in the sugar then sift in the flour and baking powder. Stir until you have a smooth batter but do not over-mix.

Fold in the blueberries, setting a few aside to pop them on top of the muffins.

Divide the batter between six large muffin cases or up to eight smaller ones. You can use tulip shaped paper cases, doubled to make them sturdier, directly in the air fryer basket. I trimmed mine slightly as I didn’t want them to be too close to the heat.

Add a couple of blueberries on top of the batter and sprinkle with the sugar.

Bake the muffins for 18-20 minutes in the air fryer at 320°F (160°C). They are ready when a toothpick inserted in the middle comes out clean. Cool the muffins before serving.

RECIPE TIPS

CAN I BAKE THESE IN THE OVEN? Yes of course. Bake in a 350°F (180°C) preheated oven for 18-20 minutes or until they pass the toothpick test.

CAN I USE FROZEN BLUEBERRIES? I prefer to use fresh blueberries as they tend to “bleed” less into the batter. If you are using frozen ones do not defrost them first.

Ingredients

  • 1 cup + 4 tbsp (150g) flour all-purpose/ plain
  • 1 ½ cups (150g) sugar or Sukrin Gold sweetener
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ¼ cup (60ml) butter melted
  • ½ cup (115g) vanilla yogurt (1 small pot Activia)
  • 1 large egg

  • 2 tbsp Demerara / Turbinado sugar to top the muffins
