Homemade yoghurt with spiced roasted plums and granola

Have you ever made homemade yoghurt? I had not until recently, when Hansells sent me their yoghurt maker to try out. Turns out it is extremely easy – child’s play in fact. Which may be why both my children insisted in appearing in our little how-to video – a bit surprising if you consider just how shy Sam normally is.    Once you have the Hansells maker and have selected one of their yoghurts, all you need to do is mix with cool water in one of the containers, fill the tub with boiling water, add the yoghurt container and leave to set overnight. The yoghurt mixes contain probiotics and live cultures but no artificial ingredients – and what’s more the yoghurt lasts up to two weeks in the fridge. Of all the yoghurts I tried, the Lite Greek, and Classic Natural were my favourites, while the kids predictably preferred the Vanilla and Strawberry ones. I love having the natural yoghurt for breakfast either with bircher muesli or with granola. A little homemade fruit compote or roasted fruit is wonderful as an added treat – and, again, very simple to make.

For the granola

I love using odds and ends to make granola with – any half empty packs of nuts or seeds can go into your homemade mix. The one thing I don’t love is dried fruit, so have left those out. Feel free to add some if you like, mixing them into the granola during step 3.
 
Ingredients
Makes 1 large jar
250g | about 9oz jumbo rolled oats 
100g | 3.5oz nuts, roughly chopped (I used pecans)
60g | 2oz mixed seeds (I used sunflower, pumpkin and linseed)
60g | 2oz flaked coconut
2 tbsp coconut oil, melted
100g | 3.5oz maple syrup
3-4 tbsp runny honey
1 tsp ground cinnamon
 
Method
  1. Preheat the oven to 150C (300F). Line a large tray with baking paper.
  2. Place all the ingredients apart from the coconut flakes into a large bowl. Add the coconut oil, maple syrup and honey and mix together with a large spoon so that the dry ingredients are coated in the oil, honey and maple syrup.
  3. Spread the granola mix on the tray and roast for 15 minutes. Remove from the oven, mix in the coconut flakes (and any dried fruit, if using) and return to the oven for 10 minutes.
  4. Allow the granola to cool down and then transfer to a jar. It will keep for about a month but it usually doesn’t last longer than a week!
For the spiced roasted plums
small punnet ripe plums, split in half, stones removed
2 tbsp soft dark brown sugar
1 tbsp Demerara sugar
handful star anise
sprinkle cinnamon or mixed spice
a little rapeseed (canola oil)
Method
  1. Preheat the oven to 200C (400F). Add a few drops of oil to a small roasting tin then use kitchen paper to coat the tray with the oil.
  2. Add the halved plums and sprinkle with the sugar and any spices. Scatter the star anise over them.
  3. Roast in the oven for 10-15 minutes until the plums are soft and have started to release some of their juices.
  4. Layer the granola and yoghurt in glasses or bowls and top with a couple of roast plums. Save any extra fruit in the fridge to use another day.

    Oh my Lucy. You have no idea how much I am just wishing that I had this for breakfast this morning. Those plums look so juicy and scrumptious and you can never go wrong with homemade granola. It tastes so, so much better than the store bought varieties. As for homemade yogurt. . .I haven't tried to make this since my days as a microbiology student. . .but perhaps it is high time we change that given the hubby and I are both die hard yogurt fanatics (it's the perfect brekky).
