We are currently the House of Sniffles. It’s like the House of Flying Daggers, minus with the daggers, with extra coughing and sneezing. As soon as one person gets rid of their cold, another will fall ill and so on… for weeks on end.

I needed an injection of HEALTHY into my day and nothing says healthy like a colourful mixed berry smoothie bowl. I mean look at it! I feel better simply taking in the vibrant colour and varied textures before I have even tasted it.

I rely heavily on frozen fruit in my recipes and I always have several bags in my freezer for use in smoothies, cooking, baking or cocktails. Modern freezing methods not only lock in the natural flavours in fruit, they help seal in all the nutritional food benefits too.

Iceland have a fantastic selection of frozen berries and I have used their blueberry, raspberry and mixed berries in this smoothie bowl. Not only are frozen berries delicious, they are also a lot more economical than the fresh ones and available year-round too.

When it comes to using frozen berries I usually either use them straight from frozen or allow them to partially defrost at room temperature. Frozen berries can be used in baking, for making sorbets and when making fruit syrup.

I usually allow them to defrost a little before blending in smoothies as this affects the thickness of the drink. I always swore I would never ever do a smoothie bowl on my blog – I just didn’t see the point of them, other than the fact that they are strikingly pretty of course.

But having made one finally I can see the error of my ways. A smoothie bowl is breakfast all on its own – healthy and very filling. Topped with nuts, seeds and berries it takes minutes to prepare and has potential for endless variations. I am a total convert!

Ingredients

  • 260 g | 1 1/2 cups mixed frozen berries blueberries, raspberries, blackcurrants, blackberries
  • 120 ml | 1/2 cup coconut milk or non dairy milk of choice
  • 20 g | 1/4 cup gluten free oats not the jumbo kind
  • 2 tsbp date or agave syrup
  • 1 tbsp almond butter optional
  • 1 tbsp chia seeds
  • Topping
  • handful mixed seeds pumpkin, sundflower, linseed etc
  • handful walnuts or nuts of choice
  • handful fresh raspberries
  • handful dried cherries or goji berries finely chopped

Instructions 

  • Measure the frozen berries and allow to partially defrost at room temperature.
  • Put all the ingredients for the smoothie in a blender and process until you have the right consistency. It should be smooth and slightly thick.
  • Pour the smoothie into a bowl and layer the toppings over the surface. Serve immediately.
