Can you make pot roast in the air fryer? I was wondering that just the other day and I decided to just go ahead and try making it.
Spoiler alert… Air Fryer Pot Roast is easy, quick and delicious. The beef cooks together with carrots and potatoes to create an effortless meal that cooks in under an hour in your air fryer.
Pot Roast Beef VS Roast Beef
Pot roast cooks, as the name suggests, in a covered pot together with some sort of braising liquid. You can make pot roast in a Dutch Oven, the slow cooker on an Instant Pot.
Roast beef on the other hand is usually cooked in an oven without any added liquid – as you can see in this Topside Beef Roast recipe.
To make Air Fryer Pot Roast you cook the beef on its own first for just 10 minutes. This creates a lovely crust that will seal in the juices.
The vegetables are then seasoned and cooked in a container (I used a deep cake tin) in a red wine braise with the beef on top.
The beef can be cooked rare, medium or well done depending on how you like it. If you use an instant read thermometer you can’t go wrong.
You will continue cooking the vegetables in the pot roast while the beef rests. When the potatoes are cooked through you are ready to serve!
Here’s what you will need
I used a 20inch cake tin, a Cosori XXL air fryer and Thermapen instant read thermometer for this recipe. Please note the size of your air fryer will need to be taken into account when making this recipe.
- The beef: I used a top round beef joint (or topside as it is called in the UK). This cut is lean and best suited to being served medium rare.
- The vegetables: I used carrots, potatoes and shallots but any root vegetables can be used in the same way.
- The seasonings: the beef is simply seasoned with salt, pepper and mixed herbs. Same goes for the vegetables with the addition of a beef stock cube (or bouillon).
- Braising Liquid: the vegetables are cooked a red wine – if you don’t like cooking with wine you can simply replace it with beef broth.
- The flavor bombs: soy sauce, Worcestershire sauce, redcurrant jelly, brown sugar and bay leaves.
HOW TO MAKE AIR FRYER POT ROAST

Take the beef out of the fridge for 20 minutes before cooking. Drizzle with olive oil and season well with salt, pepper and mixed herbs.
Preheat the air fryer for 5 minutes at 400°F (200°C). Place the beef joint in the air fryer basket and cook for 10 minutes at 350°F (180°C).
Meanwhile, drizzle your vegetables with olive oil, season well and sprinkle with the beef stock cube.
Pour the wine, Worcestershire and soy sauce in a deep container (such as a 20 inch cake tin). Add the redcurrant jelly, brown sugar and bay leaves. Stir to dissolve the jelly, then add the seasoned vegetables.
Place the beef joint on top of the vegetables then place the cake pan in the air fryer basket. Cook for 20 minutes then start checking with a meat thermometer that it has cooked to your liking. I took my beef out once it reached 150°F (65°C).
Cover the beef loosely with foil and leave it to rest. Continue to cook the vegetables for a further 20 minutes or until the potatoes are tender. Strain the pot roast juices to a gravy boat.
Slice the beef. Arrange the vegetables and beef on a platter. Serve with a generous drizzle of the gravy. Delicious!

Check the beef earlier than you think. You can always cook it for a bit longer if necessary but can’t do anything once it is overcooked! The cooking time will depend on the size of the beef joint and the type of air fryer you use (they all vary quite a bit).

For the vegetables
- 8 small potatoes , halved
- 4 carrots , cubed
- 1 banana shallot , sliced
- 2 tbsp olive oil
- Salt and pepper
- 1 beef stock cube , crumbled
- 1 tsp mixed herbs
- ½ cup (120ml) red wine or water
- 2 tbsp soy sauce
- 2 tbsp Worcestershire Sauce
- 2 tsp redcurrant jelly or cranberry sauce
- 1 tsp brown sugar
- 2 bay leaves
Instructions

- Place the beef joint on top of the vegetables then place the cake pan in the air fryer basket. Cook for 20 minutes then start checking with a meat thermometer that it has cooked to your liking. I took my beef out once it reached 150°F (65°C).
- Cover the beef loosely with foil and leave it to rest. Continue to cook the vegetables for a further 20 minutes, topping up with a little water if pan is looking dry. Cook until the potatoes are tender. Strain the pot roast juices to a gravy boat.

Did you mean to say a 20 cm cake tin. 20 inch is enormous! And by the look of your pictures, that cake tin is nowhere near that size. I don’t know what model airfryer has a 20 inch bed.

Absolutely PERFECT!!!! Beef is crispy on outside & moist & stringy on the inside 😋
My air fryer was not deep enough to cook all the veggies & pot roast together, so I just put a Mirepoix on bottom & pot roast cooked on top. When meat reached desired temperature, I dumped all the juice & veggies into the blender (or food processor) & puréed them. Then pour into pot & on the stove top heat together & add flour & water to thicken gravy. BE CAREFUL when doing so that you don’t over fill container, as hot liquid may expand & make a mess, or worse burn you.
