Corned Beef Hash is one of those simple dishes that manages to be thrifty, hearty and delicious all at once. Air Fryer Corned Beef Hash is all that and more!

You don’t need to brown the onions or parboil the potatoes first – everything cooks in the air fryer, including eggs.

WHAT IS CORNED BEEF?

Corned beef is beef that has been cured in a salt solution (brine). In the UK however, corned beef usually refers to salt beef which is minced and canned. 

You will find recipes for homemade salt beef and for Air Fryer corned beef on this site… which means corned beef hash is a must also!

CORNED BEEF HASH

Hash is a dish that contains onion, potatoes and meat (from the French “hacher” which means to chop or mince). 

You can make hash using leftover boiled or roast potatoes and corned beef, making sure nothing goes to waste.

AIR FRYER CORNED BEEF HASH GROCERY LIST

Here’s what you will need for our hash – including some substitution options. I used my Cosori Air Fryer for this recipe and a cake tin to cook everything in. If you are not adding the eggs you can cook everything directly in the air fryer basket.

  • Vegetable oil
  • Onions
  • Potatoes – floury potatoes such as Yukon Gold or Maris Piper work best, although almost all types will work. You can also use leftover cooked potatoes.
  • Corned beef: you can use leftover corned beef, corned beef slices from a deli or canned corned beef. 
  • Mixed herbs such as Herbs de Provence or Italian seasoning (optional)
  • Worcester sauce
  • Parsley to garnish
  • Eggs – optional 
  • Salt and freshly ground pepper

HOW TO MAKE AIR FRYER CORNED BEEF HASH

Finely chop the onions. Peel the potatoes and cut them into evenly sized small cubes.

Place the onions and potatoes in the cake pan, or other air fryer container, and drizzle with the oil. Season with salt and pepper and sprinkle with the mixed herbs. Stir to coat in the oil and seasoning.

Cook in a preheated air fryer for 20 minutes at 180°C (350°F), stirring occasionally so that the potatoes brown and onions cook.

Add the cubed corned beef and drizzle with the Worcester sauce. Cook for a further 5-10 minutes*, stirring once halfway through (*depending on how crispy you like your hash).

Make small wells in the hash and crack the eggs in them. Cook for a further 3-5 minutes or until the eggs are cooked to your liking. Sprinkle with the parsley and serve!

RECIPE TIPS

EASY ON THE SALT! Corned beef is salty so be very sparing when seasoning the dish. You can always add a bit more salt if needed when you are serving.

AIR FRYERS VARY: Your model may not be the same as mine and so the cooking times are a guideline. You may need to adjust the cooking time depending on the size and efficiency of your air fryer.

REHEATING CORNED BEEF HASH IN AIR FRYER: If you have leftovers then stick them in the air fryer for about 5 minutes at 180°C (350°F) to reheat. 

CORNED BEEF HASH VARIATIONS: You can add more vegetables to your hash if you like. Diced peppers, tomatoes or mushrooms all work well. Replace the corned beef with leftover cooked sausage, black pudding or chorizo.

SERVING SUGGESTIONS: Eggs are the natural companion, whether cooked in the hash or separately. Baked beans and a slice of air fryer bread would turn this into a full meal.

Ingredients

  • 2 onions , finely diced
  • 4 medium potatoes , peeled and cubed
  • 2 tbsp vegetable oil or use cooking spray
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1 tsp mixed herbs
  • 7 oz (200g) corned beef low sodium canned corned beef or leftover cooked corned beef, cubed
  • ½ tbsp Worcester sauce , or to taste
  • 2-4 eggs (optional)
  • 1 tbsp fresh parsley , chopped

Instructions 

  • Preheat air fryer for 5 minutes at 200°C (400°F). Place the onions and potatoes in the cake pan, or other air fryer container, and drizzle with the oil. Season with salt and pepper and sprinkle with the mixed herbs. Stir to coat in the oil and seasoning.

  • Cook for 20 minutes at 180°C (350°F), stirring occasionally so that the potatoes brown. At this point they should be cooked but still a bit firm.
  • Add the cubed corned beef and drizzle with the Worcester sauce. Cook for a further 5-10 minutes (depending on how crispy you like your hash) stirring halfway through.

  • Have a taste and add more salt and pepper, if needed. Sprinkle with the parsley and serve!

Notes

  • I used a low sodium canned corned beef. Since corned beef can be very salty be stingy when seasoning the hash.
  • You can add more vegetables to your hash if you like. Diced peppers, tomatoes or mushrooms all work well.
  • Replace the corned beef with leftover cooked sausage, black pudding or chorizo.
  • If you have leftovers then stick them in the air fryer for about 5 minutes at 180°C (350°F) to reheat.
