A few days ago it was a triple layer Chocolate and Nutella Cake… today I am posting a recipe for Vegan Raw Brownie Truffle Bites. The cake was an incredibly indulgent treat and one I am actually planning to bake again this weekend for my neighbours’ low-key wedding. These raw truffle bites on the other hand tick all the boxes for healthy, natural and fibre-rich without being any less indulgent. In fact they are so rich and dense they rival brownies in the satisfaction department – only difference being you can feel just a little bit smug eating these!
I had been sitting on a pile of healthy ingredients from MyProtein.com for a little while and I am elated to finally figure out a way to use them. These bites are a fantastic energy boost for when you arrive home from work starving and ready to ransack the biscuit tin – historically the time I make the worst food choices. And kids love them. Finally a snack with actual nutritional benefits that’s devoid of any additives. Seriously, these are win-win-win.
- Put the dates and prunes in a bowl and add the orange juice and zest. Leave to soften for 10 minutes.
- Blitz the dates, prunes, coconut oil, raw cacao powder and ground cinnamon in a food processor or Vitamix until they form a sticky paste. Fold in the dried cranberries and chopped nuts. Chill in the fridge for an hour.
- Place your choice of coatings in small shallow plates. Form walnut sized truffles and then roll in the coating of your choice. Store in the fridge.
