Homemade Passion Fruit Syrup – this delicious syrup is super easy to make and can be used in all sorts of recipes, from cocktails to desserts. It's perfect for adding a touch of sweetness and exotic flavor to any dish.
Start by making a simple syrup by gently simmering sugar and water in a saucepan. Stir until the sugar dissolves and take off the heat.
Slice eight passion fruit in half and scoop out their pulp into the simple syrup. Stir and leave the syrup to cool down. The fruit pulp will steep in the syrup and turn it a gorgeous golden colour.
Strain the mixture through a fine sieve to remove the seeds and pulp. Don't press on the pulp as it may turn your syrup cloudy. Stir in the vodka if using.
Decant the syrup into a small bottle using a funnel and store in the fridge for up to two weeks.
Notes
To make a more viscous syrup increase the amount of sugar to 3/4 cup (150g). The syrup will last a little longer thanks to the higher sugar content.
