Wash and peel the carrots and trim the ends. Cut them into even-sized pieces so they cook at the same rate.
1 lb (450g) carrots
Place the olive oil, maple syrup, lemon juice, minced garlic, seasonings and thyme in a bowl and stir to combine. Add the carrots and toss to combine.
2 tbsp maple syrup, 1 tbsp olive oil, 1 tbsp lemon juice, 2 cloves garlic, 1 tsp dried thyme, ¾ tsp sea salt, ½ tsp black pepper, ¼ tsp red pepper flakes
Preheat the air fryer to 375°F (190°C). Add the carrots to the air fryer basket in a single layer (you may need to cook in batches)
Air fry for 10-12 minutes, shaking the basket halfway through. Check the carrots are cooked to your desired doneness – cook for a little longer if needed.
Transfer the carrots to a serving dish and check the seasoning – done!

Store cooled leftovers in an airtight container in the fridge for 3-4 days. Reheat in the air fryer at 350°F (180°C) for 2–3 minutes, adjusting the cooking time depending on your crisp-tender preference. You can also reheat them in your microwave, but they will lose some of their crunch.
You can freeze roasted carrots, but I would not recommend it – they can become a little mushy when thawed and reheated. You could add to stews or blend to add in soups.
