This delicious bread uses just three Ingredients, no yeast, and is incredibly easy to make! There's no kneading, you don't need any special equipment and you can even bake it in your air fryer. Delicious spread with butter and jam and a great served with cheese!
Add the flour and sugar into a mixing bowl and stir to combine. If you are adding the optional salt and baking soda you can stir those in now.
360 g (3 cups) self-rising flour, 1 tbsp sugar
Pour the buttermilk into the dry ingredients and stir well until you have a shaggy dough.
250 ml (1 cup) buttermilk
Cover the bowl with a damp kitchen towel for a few minutes then stir again, or use oiled hands, to bring the dough together. Do not overwork the dough – handle it as little as possible!
Tip the dough onto your worktop and gather into a ball to form a round loaf. Place on a piece of parchment paper or a silicone liner and use a sharp knife to score a deem cross on top of the loaf.
BAKE IN AN AIR FRYER
Place into the basket of a preheated air fryer and bake at 180°C (360°F) for 25 minutes. Flip the dough over so you can brown the underside and bake for a further 15-20 minutes or until the bread registers 93–96°C (200–205°F) on a digital thermometer.
Take the basket out of the fryer but leave the bread in. Cover with a damp tea towel and rest for 10 minutes. Transfer to a wire rack to cool before slicing and serving. This bread is delicious served with salted butter and cheese or as a side to soups and stews.
BAKE IN THE OVEN
Preheat the oven to 200°C (400°F). Bake the bread for 34-40 minutes, or until golden brown. A toothpick inserted in the thickest part should come out clean.

Replace the buttermilk with equal amounts plain kefir or with Greek yogurt and an additional 2 tablespoons of lemon juice.
