3bell peppers(one each yellow, orange and red), sliced
1lime, cut into wedges
Instructions
Marinate the chicken
Mix all the ingredients for the marinade in a ceramic or glass bowl or container.
Add the chicken and rub the marinade over the pieces to coat.
Cover the bowl and chill overnight in the fridge or for up to 24 hours.
Cook the chicken
Preheat the oven to 200C (400F).
Slice the peppers, if using, and spread over a baking tray.
Tread the chicken thighs on metal skewers (discard any marinade).
Set a rack over the peppers and add the chicken pieces.
Cook for 25-30 minutes or until the chicken is 75C / 165 F when checked with a digital thermometer.
Serve the chicken over a bed of rice with sliced peppers and lime wedges on the side.

Notes
For a Slimming World version, replace the sugar with sweetener and leave out the olive oil. Mist the chicken with olive oil cooking spray (you can simply add olive oil to a small spray bottle) prior to cooking.
Increase the heat by adding more chilli flakes to the marinade
