How to make a large batch of Amaretto Sours (serves 5)Add 250ml (1 cup) each Amaretto and Bourbon to a blender. Pour in 120ml (1/2 cup) lemon juice and 75ml (scant 1/3 cup) egg white plus 50ml (scant 1/4 cup) simple syrup.Blitz briefly, until the drink foams up. Have a taste and adjust by adding more lemon juice./simple syrup to your taste before serving over ice.Simple syrup (sugar syrup)Combine equal amounts of sugar and water in a saucepan and stir over medium heat until sugar dissolves completely. Cool and store in a clean jar in the fridge for up to a week.You can make a more concentrated syrup by using twice the amount of sugar to water ratio. This 2:1 simple syrup will keep for longer in the fridge and you will need to use a bit less as it is sweeter.
