Instructions
Season the beef with salt and pepper. Heat the oil in a large pan or casserole.
Sear the beef, in batches, over medium high heat in a large casserole dish. Don’t crowd the meat, allow plenty of space so that it browns rather than stews! This can take up to 10 minutes and you CAN skip it if you are short on time.
Add the beef into your slow cooker together with all the remaining ingredients (apart from the chocolate) and give a good stir.
Cook on low for 8-10 hours or on high for 4-6.
Uncover the pot and stir in the chocolate, if using. Use to forks to shred the beef. Taste and adjust the seasoning if needed.
Garnish with chopped coriander and serve with sliced avocado, shredded cheddar cheese, sour cream and chopped chillies.
Serve over cauliflower rice or zero carb rice (I like Better Than Rice brand) if you like.
