Is there anything more comforting and versatile than a cobbler? The preparation time is literally under ten minutes and within 40 minutes you can have dessert (or breakfast – I am not picky) on the table. Most types of fruit can be used to suit your taste or the seasons. You can also vary the spices or even make savoury cobbler toppings for your stew. I can see this recipe being revisited on the blog!
Ingredients
900g | 2lb mixed berries fresh or frozen (raspberries, blackberries, red currants etc)
100g | 1/2 cup caster sugar
2 tbsp cornflour
For the cobbler

225g | 1 3/4 cups self raising flour
100g | 1/2 cup caster sugar
1 tsp bicarbonate of soda
1/2 tsp salt
100g | 3 1/2 oz cold unsalted butter, cubed
1 egg
Pinch cinnamon
150g | 5.3 oz Total Greek 2% yoghurt
150g | 5.3 oz Total Greek 2% yoghurt
Handful flaked almonds (optional)
1 tbsp crunchy Demerara sugar (optional)
To serve
250g | 1 cup Total Classic Greek yoghurt
2-3 tbsp honey
1 tbsp vanilla paste (optional)
Preheat the oven to 180C | 350F. If using frozen berries, defrost thoroughly and drain any liquid. Mix the berries with the sugar and cornflour. Set aside.
Put the flour, sugar, soda, salt and cinnamon in a food processor and pulse briefly to combine. Add the cubed butter and pulse briefly a few times until the mixture resembles breadcrumbs.
Put the yoghurt and egg in a measuring jug and mix well with a fork. Add to the flour mixture with the processor running on low until a soft sticky dough is formed.
Divide the berries into 5 small ovenproof dishes (10cm/4in wide and at least 5cm/2in high) or put into one large ovenproof dish. Simply drop tablespoons of the batter on top of the berries, leaving a little space between each one (the batter will spread). Sprinkle with sugar and almonds if using. Place the cobblers on a tray as the filling is likely to bubble over.
Bake for 25-30 minutes for individual cobblers and 30-35 for one large one. Cool before serving.
When ready to serve, mix the yoghurt with the honey and vanilla and spoon some over each cobbler.
