They say a habit is something you do without even thinking about it – like brushing your teeth every day. Having a good, healthy breakfast should also be a habit but it’s something I frequently go without – it’s either an epic feast or nothing but coffee. In order to break the (bad) habit of skipping breakfast I have been turning to overnight oats and they had been a bit of a morning saviour. Not only are they really filling and tasty, they only need under 5 minutes prep time the night before. I like to add a tablespoon or two of chia seeds to bulk them up and increase their overall nutritional goodness. And I have been throwing in all kinds of fresh fruit either as toppings or blitzed up in the oats. Really, I can’t think of a bad thing to say about them. I think you may actually sport a little halo, and a smug little smile, while you eat your morning bowl (or jar, in my case).
So far I have tried strawberry overnight oats, mostly to use up overripe strawberries; apple and cinnamon oats which I think might be better warmed up; chocolate overnight oats (using cacao powder not actual chocolate)… you name it! And they ALL taste good. Big smiley thumbs up all round. This matcha version was another hit – one of my favourites in fact. I also added hemp protein powder, which I originally bought to add to smoothies, and it does a good job of making me feel full until lunch. No small feat, let me tell you. Now I need to convert the kids – so far they have not been too keen.
Matcha Overnight Oats with Vanilla and Chia Seeds
- 240 ml | 1 cup coconut milk or milk of your choice
- 80 g | 1 cup rolled oats
- 2-3 tbsp vanilla soy yogurt
- 1-2 tbsp agave nectar or maple syrup
- 1 tbsp chia seeds
- 1 tbsp hemp protein powder optional
- 1/2 tbsp matcha powder
- 1/2 tsp vanilla paste
- handful berries and fresh fruit of choice
- dusting of matcha powder to serve
- Put the milk, soy yogurt, agave nectar, matcha powder, protein powder and vanilla in a blender and blitz briefly until well blended.
- Put the oats and chia seeds in a large jar. Add the wet ingredients and mix together until thoroughly combined (check the bottom of the jar where dry ingredients tend to settle).
- Cover the jar and chill in the fridge overnight.
- Stir the overnight oats and divide between two bowls. Top with a few sliced strawberries, blueberries and sliced kiwi - or whatever fruit is in season. Dust with a little matcha powder and serve.
