I used to live five minutes away from an Iceland store about 20 years ago (I mean, really, where does the time go). I would pop in on my way home from the train station to pick up a couple of items now and again, but I didn’t really shop there. Fast forward to present day and I no longer live anywhere near an Iceland store… and yet I shop there almost weekly.
You see in the past few years, Iceland has undergone a quiet but dramatic transformation. It is still the place to go for your frozen meals, yes, but it is so much more than that. There’s quality products both fresh, chilled and frozen, including a range of luxury and zeitgeisty items (amazing gelato, Belgian blue steaks and frozen avocados anyone?), and you can order it all from the comfort on your own home.
Iceland has beat many other supermarkets to be voted ‘Best Online Supermarket of 2017’ by Which and the Grocer Gold Awards and you can easily see why by trying their online shopping service for yourself.
Why do I love shopping online at Iceland – let me count the reasons
Next day delivery slots. As someone who does online grocery shopping more than most (there’s always a recipe I suddenly need ingredients for) I love the ease with which you can secure a next day delivery at Iceland. I just booked one for tomorrow and there’s two slots available despite the less than 24 hours notice.
Free delivery – technically free delivery over £35. I guess for most people this would be ranked very highly especially since the threshold to qualify is so low. No need to enrol in (costly) subscription services to guarantee free delivery either.
Friendly and accommodating delivery staff. I once ordered a few bottles of beer for a BBQ we were having and one of the bottles leaked during the delivery. The Iceland driver drove back later the same day to replace the bottle that leaked despite my protestations. Bless his cotton socks!
Amazing value for money. Look at this photo here which includes all the items I received in my £35.71 order the other day. That’s a pretty impressive haul for very little dosh and with careful ordering you can manage your entire weekly shop (for one) for £35 with free delivery.
User reviews. I really appreciate this feature which allows shoppers to leave feedback on the products – it has made me try some that I wouldn’t normally order and it’s always nice to see a supermarket be so open to feedback.
Quality and range of products. The reason I return to Iceland again and again is that I know I can rely on them for quality products. I have my little favourites list – frozen mince for Bolognese, shoulder of pork for pulled pork, cod and shrimp, as well as everyday essentials. And can’t wait for the new products I tried during their Autumn range event to be introduced in September.
And now let’s get back to these savoury eggs, cheddar and bacon breakfast waffles… because they are amazeballs (to quote my children). First off, the bacon is cooked RIGHT ON THE WAFFLE MAKER. Game changer! Secondly they are fluffy, moreish and you can reheat them the next day right in your toaster. Add a poached or fried egg on top, some baked beans on the side and drizzle with maple syrup (no, really, you have to) for the breakfast of champions!
Savoury eggs, cheddar and bacon breakfast waffles
Ingredients
- 225 g | 8oz plain all purpose flour
- 2 tbsp cornflour cornstarch
- 1 tbsp finely chopped fresh flat leaf parsley
- 1 tsp garlic salt or table salt
- 1 tsp baking powder
- 2 large eggs separated
- 370 ml | 12 1/2 fl oz whole milk + 2 tsp lemon juice
- 60 g | 2oz salted butter melted and cooled
- 100 g | 3 1/2 oz finely grated mature cheddar cheese
- 6 large slices smoked back bacon cut in half lengthwise to create 12 strips
- 3 to matoes sliced thinly optional
- cooking spray to grease waffle maker optional
- salt and pepper to season
- maple syrup to serve optional
- baked beans to serve optional
Instructions
- Whisk the egg whites with a pinch of salt until you have stiff peaks.
- Place the flour, cornflour, parsley, garlic salt and baking powder in a bowl. Mix together using a balloon whisk.
- Mix the milk, melted butter, egg yolks and grated cheese together in a measuring jug and gradually beat into the dry ingredients until the batter is smooth.
- Fold in the whisked egg whites.
- Preheat your waffle maker and spray with cooking oil (if indicated by instruction manual).
- Lay 2 strips of bacon directly on the waffle maker (and a couple of slices of tomato if using) then add a ladleful of the batter on top. Don't add too much as it will spread out when you close the lid of the waffle maker.
- Cook for 3-4 minutes or until the waffle is golden and crisp. Repeat until all the batter is used up.
- Serve topped with eggs (optional) or with a drizzle of maple syrup.
