I want to talk about stress. Stress is, right now, the biggest thing occupying my brain and its effects are fairly debilitating. Because stress might be all in your head but it manifests itself physically – in my case with headaches, insomnia, irritability and general blahness.
Is blahness a word? It ought to be. Some stress is obviously inevitable and probably even good for you. But too much and you have the frazzled mess that I am currently…
How do you cope with stress? If you have any amazing coping methods please sound off in the comments – I would appreciate any help I can get!
In the meantime I will work on my worry lines and try to eat myself out of this stress hole. And you know what kind of food is mandatory during times of stress?
It’s not chocolate – its effects are too short lived. It’s these fully-loaded vegetarian sweet potato nachos with guacamole and salsa. They have magical powers to quell an overburdened mind and bring some peace, however temporary.
Slice sweet potatoes and potatoes thinly then bake in a hot oven until crisp. Add black beans and lots and lots of cheese then grill until cheese has melted. Top with yoghurt, fresh salsa and guacamole and dig in. Sharing optional 😉
Fully-loaded vegetarian sweet potato nachos with guacamole and salsa
Ingredients
- 4 large sweet potatoes or 2 sweet and two white potatoes
- rapeseed canola oil
- salt and freshly ground pepper
- <br>
- <b>For the salsa</b>
- 3 ripe tomatoes seeded and finely chopped
- 1 small red onion finely chopped
- 1 red chilli seeds removed, finely chopped
- 2 tsp white vinegar or lime juice
- 1 tbsp finely chopped parsley or coriander cilantro
- salt and freshly ground pepper
- <br>
- <b>For the guacamole</b>
- flesh of a large ripe avocado
- 1 shallot peeled and roughly chopped
- 1 green chilli roughly chopped
- handful coriander cilantro leaves
- juice of 1 small lime
- large dash Tabasco
- salt and freshly ground pepper
- <br>
- <b>To serve</b>
- 300 g | 10 1/2oz strong cheddar cheese finely grated
- 150 g | 5.3 oz Greek yoghurt or sour cream
- 150 g | 5.3 oz tinned black beans rinsed and drained
- lime wedges
Instructions
- Make the guacamole. Put all the ingredients in a blender or mini chopper and blitz until smooth. Season to taste.
- Mix all the salsa ingredients together and season to taste.
- Preheat the oven to 200C (400F). Drizzle a large tray with the oil and put in the oven.
- Scrub the potatoes clean and dry. Cut into thin slices.
- Spread onto the hot tray in a single layer and cook for about 10 minutes, flipping over halfway through. The potatoes are ready when fork tender and crisp at the edges.
- Pile half the potato nachos onto a tray or oven-safe platter and add half the beans and cheese. Cook under a hot grill (broiler) until cheese melts.
- Add the remaining potatoes, beans and cheese and repeat until cheese melts.
- Add dollops of the yoghurt and guacamole over the nachos and scatter with the salsa.
- Serve immediately with lime wedges on the side.

‘Blahness’ is definitely alive and well in my house….. along with insomnia and more. I am really bad at unwinding. There just never seems to be enough time to stop and recover. But if Nachos work then I’ll have to give them a go. Yours look incredible! x

I am absolutely loving these, sweet potato is my fave and throw in some guac and I’m in heaven!
As for the stress, I feel ya! Mindfulness meditation is good, but it takes A LOT of practice (give it a google, you’ll find plenty of resources). I also like yoga. If you’re having trouble sleeping I totally recommend trying out the podcast “Sleep With Me” it’s free and it’s worked wonders for my sleeping problems that even medication didn’t help – it works by distracting and kind of relaxing you (by way of his dulcet tones and dull stories!. May not work for you since everyone is different, but I recommend giving it a go for a few nights!

Thanks for your suggestions Michelle – I think the podcast sounds like an excellent idea! I actually had the Food Blogger Pro podcast on really low last night to get me to sleep! Not that they are dull but the familiarity of it is soothing. I love yoga too but think I need to get out of the house and find a class – whenever I try to do anything at home my dog comes and literally stands over me!

My amazing coping method is to EAT. A LOT. We’re talking comfort food, chocolate, and…oh, wait. Er, probably NOT what you’re looking for? Anywho, these nachos would fit the comfort-food bill without being quite as naughty as what I might be tempted to make otherwise. I truly hope that your stress level gets more tolerable soon!

I think that’s my coping method also but not good for the waistline in the long run. Still SOME good food has got to be stress relieving, right?
