This blogpost might as well have been titled ‘avoiding work and procrastinating’. I had (have) so much work to do today. I am designing a new cookbook and working on devising the style for another. I am up against deadlines and for the most part I was very good today… until about 3pm when I realised I really, badly wanted to post an update. But with no time on my hands I only managed to very hastily photograph a cake I made yesterday – I took about 10 shots as opposed to the usual 50.
With the cake photographed, I went back to my work but I could not concentrate to save my life. All thoughts were on that cake and developing the photos I took. So I wasted a good while on those and writing up the recipe… then I realised I simply had no time to post that recipe as it has a lovely giveaway attached… Back to wanting to post something… You can see it’s a vicious cycle!
The sad truth is I feel much more motivated and inspired when I am up against time constraints and the working on the blog feels like a guilty pleasure… Contrary, moi? Well, yes. I am a Scorpio. Anyway the cake will be published tomorrow – hold on to your hats it is way delicious and so easy. In the meantime let’s celebrate the return of cocktail Friday with this lovely Blackberry Daiquiri. It is amazing and also VERY strong. You have been warned. As you can see the cocktails shots were take in about 10 minutes flat but I played around with filters because how else would I effectively avoid work??
Blackberry Daiquiri
You will need to do some work ahead of making this but I promise it is both easy and worth it. Take one small bottle of white rum. Doesn’t have to be expensive. Pour the rum into a jar and add 450g/1 pound blackberries (you can use frozen ones but thaw them first). Shake then chill overnight or even just for a couple of hours before using. Strain the rum back into the bottle and either discard the blackberries or freeze them then blitz in a blender to make a frozen daiquiri.
Ingredients
80ml | 2.8 fl oz blackberry rum (see above)
60ml | 2 fl oz Grand Marnier
juice of 1 lime
1 tbsp simple syrup
Method
Shake all the ingredients with plenty of fresh ice until a frost forms on the cocktail shaker.
Strain into a glass half filled with crushed ice. Sip carefully.

I was amazed by the colour – only let the blackberries steep for a couple of hours! I actually turned the saturation down in the photos, it looked so unreal!
